I tried to freeze bananas before and they all turned an ugly dark brown. I have no idea why.

It is from all the sugar in the bananas. The only way to preserve them without turning brown is to dry them with some sort of acid like lemon or lime juice.

@@ruralhomesteader6650 how do you dry something with something wet? Like put on the juice then let it air dry before bagging?

@@TSunshineful you add the lemon juice for the citric acid. It helps keep the banana's from turning brown. You can add a power version to reduce the amount of moisture. But bananas are already very moist. It doesn't seem to add to the drying time by adding a small amount of lemon juice. But I put mine in the dehydrator, not air dry. Hope that helps. Thanks

No. But the Browning is what concentrations the sugars and takes the tannic taste away.

It is recommended to keep them for two to four months. But we have had some in over 6 months and we have uses them in smoothies and baked with them. They work and taste just great.

I freeze them like this so I can extract the juice and boil it down to make a less dense banana bread. Does that answer you question?
