I just did this on Monday. I know the texture can be a bit different but it is still really good and great for quick meals. I now have over 60 jars ready for the year

I love canning meat! I did mine in bouillon last year. This year, no salt, just water! Last year's was delicious, but I think I would prefer less sodium, as using it in recipes seems to make it too salty. Nice refresher video! I'm wishing Happy Spring to all!

I keep approximately 10 pints in my pantry. If I get down to 5 I start looking for sales on hamburger. I dry canned some hamburger the first time. I now add water and the texture is so much better. Thank you for all you do.

My rings look like yours. About once a year, I swirl some steel wool around the inside of the ring and they work just fine. Keep up the great work!

Ground beef is awesome to have on the shelf. So is ground sausage. Our water is very hard, so I use cream of tartar is hasn't bothered my rings or lids.

I was taught to cool the liquid, skim most the fat off and the remaining juices/collagen were used instead of water. Like you said, the flavor is in the fat so I make sure there is some in there. I have never had a problem. Yay!

Have 2015 chicken in pints. Will boil it for 10 minutes before using it. That will change the texture but can’t risk it. All the seals are in great shape, visually it’s like the day it was canned. Love canning ground beef, in a shtf, it will be welcome in tacos. Got MASA to make tortillas and hope it doesn’t come to that but it will be a treat.

I did it! I canned ground beef and pork for the first time. Now, I need to open one and use it to see if the texture will be okay for our family. No need to can if we don't want to eat it. I canned 4 pints of beef/pork and 4 pints of raw chicken legs. The chicken looks terrible but I think mostly because I didn't add any liquid with the legs. Again we need to try a jar and see if the texture is okay for our family. I am really hoping it is acceptable because I am looking for shelf stable way to keep meat incase of a power outage and we loose our freezer for an extended period of time. The canned ground beef/pork had a good texture. I used it in a homemade hamburger helper type skillet meal. It was good enough that I would make tacos with that meat and be fine. Next we will try the chicken. Honestly, it looks terrible with dark bones and greasy liquid. I think that I will debone it and use it over rice or noodles.

You can use an eight tsp of cream of tartar instead of vinegar to your water to prevent the jar cloudiness and it won’t tarnish your rings! ❤

I didn't know this and I have a bunch of tarnished rings. I wish I had learnt this sooner. I live in the countryside in Tuscany, Italy where we have really hard water. Since I have to import everything from the US, which makes it 2 and a half times as expensive, this will hopefully lengthen the life of my rings! Thank you soo much!

I am doing it! Have trouble maintaining steady pressure! I sat and babysat this pot! Moving the heat higher and lower. I was to maintain it at 11. Never went below 10...I don't know what the problem is?! I have a old Frigidaire glasstop. I gotta say I was a nervous wreck. It is 2am and waiting for it to cool down. Well, we'll see!

My rings are well used, I started removing the rings, washing and oven drying to help prevent rust. They screw on, they are used.

Like watching videos when you do different meats to can up, it does make me nervous every time I make some, but I’m slowly feeling comfortable, been canning for yrs but meat has alway made me uncertain till I canned corned beef, that did it! Oh my! You’re fault🥰one of my favorites also is ground Italian sausage, for everything, went to get some out pantry the other day and I ran out, I’m like O no! So that will be coming up soon on the to due list, and yes that meat masher thing is wonderful and it doesn’t scratch you’re enamel pans, got mine at .99 store, thk again for video, have great day🌞

I started canning in 1975. I never can with salt in anything I'm canning. The Home Economist at my local County Extension Office or The Ball Canning Book said it is not necessary to use salt. It is only for flavor. There's not enough salt for Preservation of the product. If you choose to use salt in your canning DO NOT USE IODINENIZE SALT. The vinegar also rusted the rack in my water bath canner. I quite using the vinegar in the pot, just on the rims before I put the lids on.

I love having it canned. I didn’t can it with liquid because that’s not the way I saw earlier. Next time I will try it with water and see which way I like best. To make a quick meal I just get a jar of hamburger, jar of carrots, jar of potatoes and then I get a can of tomato soup. So quick! I don’t add salt either. Did one time when I canned chicken soup and it was too much! Thankfully a friend told me to add a few potatoes and then it wasn’t so salty tasting.
