The information you have shared since I found your channel has made me rich! I have canned sweet potatoes, ugly chicken, ugly beef, really ugly pork butt, fiesta ranch beans and green beans. I have dehydrated mushrooms, onions, celery, and garlic. Made two batches of blueberry jam and tomorrow I will be making plum jam. I have 20# of potatoes that are net up. Oh never ever wonder about the inspiration you have given to so many. Thankyou.do much.😊

Leisa,I noticed one or two of your jars weren't bubbly like the others. I canned chicken the other week, and sure enough,all but one jar bubbled like crazy. As I checked the jars a few hours later by lightly tapping for seals,that one sealed as I tapped on it. Next morning, I checked it's seal and it seemed good but ,I know it sounds crazy,but when I tapped on the jars,it sounded different. I decided to put it in the fridge and make chicken salad later. Sure enough ,that dang jar had a very puny seal when I opened it. I believe it would've gone bad on the shelf! Thanks for sharing your canning wisdom with us!😊

With plastic lids, I have always said that the one that doesn't bubble like the others, is the one that won't seal. 100% every time. Doesn't work the same with the two-piece lids.

This was a good refresher for me. I haven't used my Tattlers in two years, but I need to use them this year. On the meat issue, I'm not sure it is so much that they think they can't can meat with them, it's that they didn't do it right and had a lot of failures and didn't want to risk their meat with reusable lids. Reprocessed beef gets really dry, in my opinion, and it is expensive. I have to admit I have never canned meat with mine. I have only canned broth, potatoes, green beans, and carrots, all stuff I grew for next to nothing. I am going to try this year, though, one at a time until that fear goes away.

Love Tattler's. Have a few stocked so haven'ty tried the Harvest Guard. One of the most satisfactory things for me is...if they don't seal, I just wash the lid and gasket and re-do...haven't lost the lid to be used for dehydrating. I have used my Tattler's for vacuum sealing also. Have jars of buillion cubes sealed with Tattler's and they're still sealed...2 years and counting..

Thanks for a voice of reason with the word going around youtube that reusable lids aren’t suitable for meat. Seems that some canners might be forgetting the very high temps achieved by pressure canning. A good video and a good explaination of finger tight. Best ever actually, as if one takes the finger tight term literally as I did on my first canning outing and found subsequently that it really means a little bit tight. Thanks Leisa

Hi Lisa, I'm not familiar with Harvest Guard but have used Tattler for several years. I love them but I have two different models. With the original ones you used them just as you described in your video but with the newer E-Z Seal lids you tighten down fingertip tight just like the metal lids and then tighten fully when taken out of the canner. I wasn't sure if you realized there were two types of Tattler lids. They reengineered them a few years ago. The new ones say E-Z Seal on the lid and they do have an indent when they're sealed. Thanks for everything, I love your channel. I'm also in Michigan, over in the Thumb :)

Hey Lisa I've talked to you before on comments but I always reuse my lids the steel disposable ball or Kern... some people do some people don't I have perfect success using them over and over And over ... if they're slightly bent from Popping them open I will straighten them out and I will scrub the seals with the scratchy side of my sponge and do a inspection.... I boil them a little bit and they work perfect every time I don't think I've ever had one single lid fail on me but that's me LOL

I have bacon and pork tenderloin from 3 years ago with tattler lids on my shelves . I had a few if the jars with bacon that lost seal but I think it was because the boxes they were stored in were moved around a couple of times when my husband was building new shelves. I also had a couple of jars with potatoes do the same thing . They were moved also. I have sweet potatoes from 3 years ago that were never moved and all of them have kept their seal .

But, but, but..... It's all about that PING! I have only started using the Tattler's, and for me it is a psychological thing being that the 'ping' is my self assurance that my jar is sealed correctly, as well as knowing that the button in the middle doesn't pop up or down once canning / cooling is complete. So far I have only used the tattlers on something I know I am going to use right away or have little care of losing my food product (tomato water). I am, however, becoming more comfortable with them and will be ordering these in bulk soon if my success rate continues.

I didn't look up the specific rule, but on Tattler website it says to not use this product above 250 degrees. The website does not make this real clear. Someone much smarter than me might be able to figure it out. I believe that is where the "you can't use them for meat" comes from. 10 pounds pressure runs to 240 degrees? Anyway, thanks for the video. I'm waiting delivery of my Tattler LIds.

To remove the -metal lid- with out damaging it... I put a table knife across the top of the lid and have the can opener make contact with the knife, instead of lid. For the reusable lids, Tattler, and Harvest Guard, I use the Tattler lid opener that I bought from Tattler.

@future.homesteader
@future.homesteader 3 жыл бұрын
What size pieces of bone are you using? Chicken bones, beef ribs, etc bones should be fine. Large soup bones may be too big to can as broth. DON'T use broth canning times because the bones take much longer to get to safe temperature in the middle than broth / stock does. Use 75 mins pints / 90 mins quarts which is the longest time used for any meat. You always want to use the longest time that might apply to the food you're canning.

@@future.homesteader thank you for your answer. I added soup bones and water, 15 pounds pressure for 90 minutes. I am in higher altitude. I'm at 4500 and have yet to consistently can the meat. The latest issue besides occasional siphoning, is after waiting 24 hours to test the seal and put them away. As time progresses they're failing at a higher rate even though they were sealed initially, if I'm making sense. After the last batch of 18 I had a failure rate of about 60% a month after canning. Lids just slide off and there's mold. I've given up on them for meat.

Question: when PC’ing I notice some jars have boiling bubbles when taken out and some jars do not. Do you have any idea why?
@kathytaylor6128
@kathytaylor6128 3 жыл бұрын
Completely normal to have " boiling" happening after removing them from the canner. You're good. You will have this happen when using metal lids also. I found with the Tattlers, when I tightened them down after a few minutes when they stop " boiling" in the jars, I don't have any lid failures. I hope this helps.
@sarahross6157

Kathy Taylor yes I have noticed that with the metal lids as well. Just wondered why some jars do this and some don’t, when the come out of the same canner.
@kathytaylor6128
@kathytaylor6128 3 жыл бұрын
@@sarahross6157 it can be caused from several things. Maybe a ring was tightened a quarter of an inch more than others or maybe it was just sitting in the canner where the heat from the eye of the stove was just slightly different than where the other jars were sitting. Or it didn't quite equalize to the pressure outside of the canner as fast as the other jars. It is completely normal to have a jars to continue to boil while others don't when you take them out of the canner. As long as you don't have siphoning of the liquids from your jars, your good to go.

I'm wondering if it might also have something to do with the ratio of solid food to liquid in the jar? Maybe a jar with a little more liquid in it than another jar in the same canning batch would be more likely to continue to boil than would a jar with a bit more solid food in it?
