You saved my life!! I am new at canning my husband bought this electric canner. He was going to sell it but I wanted to try it first. I canned 18 pints of carrots. YEA!! Now I am going to can other vegetables.

I bought the larger (5qt) model of this same canner about 2 years ago. I have used this canner practically every time I can. And honestly let me say that I love it. I can anywhere between 300-500 jars per year, and while my 921 is my workhorse go to canner I use the presto for overrun canning and smaller jobs. It is so easy to use that I have no problems running both canners together at the same time. I really cuts down on the amount of time it takes me to "get-er-done".

Totally agree! This has been very handy to keep canning off to the side while doing other things (including bigger batch pressure canning on the stovetop). Very happy I added this to the kitchen! Thanks for watching!

Thank you for showing this process, potatoes will be next for me. I just made turkey bone broth for the 1st time and pressure canned 4 quarts in this same canner. I am in the cool down process now and feel very confident using it for potatoes and carrots, amongst other items. I watched videos on this canner from Rosered Homestead first on raw pack chicken, which I want to do as well. I also have an Instant Pot which is so easy and this pressure canner is just as simple.

Hello! I used hot water from the kettle for the potatoes in the jars. I provided a link in the description box below the video for an electric kettle that would work well for this canning project, to give you an example of the equipment used. Thanks for watching!

Hi! Thank you for the helpful demonstration for potatoes. I just bought a Presto pressure canner and I'm new to canning. I read the instructions on potatoes and it said to add ascorbic acid to the potatoes when they are sitting in water. Is ascorbic acid the same as acidic acid?

Hi Linda, thanks for watching! Ascorbic Acid is Vitamin C. I would stick with adding Ascorbic Acid like the recipe says. Some people when canning will add Lemon Juice as a substitute, or for the needed ascorbic acid/citric acid, often when making jams. A little squeeze of lemon juice in the water would work as well, if you are having the potatoes sit for a while. Acidic Acid on the other hand, think vinegar - and is used more for cleaning or in vinegar solutions.

I’ve never canned at all. I just got this exact machine. How do I prep my jars? And what size jars do you use for this? And, where do you buy asorbic acid?

Hello, thanks for watching! In general, the jars are prepped by making sure they are clean before you use them. I usually will run them through the dishwasher if I am unsure. Next, they are further prepped by following the steps mentioned in the video (this involves making sure they are heated slightly so they are the warm like the ingredients you will be adding). As far as the size jars you can use, the manual of the canner has tables listing how many and of what size jars you can use for water bath or pressure canning. I also go over this in the unboxing video [kzbin.info/www/bejne/kGPHqqJtotOYl9U]. Ascorbic Acid/Citric Acid can be purchased wherever you get your canning supplies from. It is usually right next to the canning jars and is made by various brands. Ball has one that I use. You can also purchase in bulk. I have included links to the various canning additives you may use for canning in the Presto Digital Pressure Canner Step by Step video as well as the Unboxing video. You should also check out one of the cookbooks mentioned in the description box as they are a great resource for getting started with canning!

Also, is there something specific that needs to be done to the tops of the jars before putting the lids on?

You should wipe the tops of jars with a clean towel or paper towel. If you are canning something sticky, such as jam, you should wipe with a slightly dampened towel/paper towel. This will help ensure the lid makes a nice seal. Good luck canning!

I just added salt to the jars with the potatoes (optional, for flavor only). You can make a solution of water with ascorbic acid or lemon juice, if you like, to place the peeled & prepped potatoes in so they do not brown prior to par cooking/canning. I've found that just placing the peeled & prepped potatoes in cool water before par cooking them seems to work just fine, if they do not sit for an extended amount of time prior to canning them. I canned potatoes yesterday and forgot to wipe the rims before putting on lids and canning. They all sealed. Will they be okay?

What you are looking for is a clean rim so that the lids make a nice seal. If your jars all sealed, you should be good to go. Maybe you were really clean when you were canning and didn't need to wipe anything off! Either way, in time it will become part of the routine the more you can. :)

Love my digital canner. The pin in my regulator came out when removing. Has this happened to anyone else? Does it affect the regulator ?

I've really been enjoying using the Presto Digital Pressure Canner as well; it's so easy to use! In regard to the Regulator, if it broke in any way, I would suggest getting a new one. You can get a replacement Regulator Part for @ $10 on Presto's website. Just plug in your model number and the regulator part is available to purchase. It's better to be safe and have it work properly for many years to come! Thanks for watching :)

How full with potatoes? Was that half way or all the way?

The jars are full of potatoes and then the hot water to a 1" headspace in the jar. You want the potatoes covered with the water in the jar - if some are sticking out above the water and the headspace measurement, just remove those potatoes and place them into another jar. You can use a Headspace Measuring Tool (as in the Video) like they have in the Ball or Norpro Canning Essentials Sets to help measure the necessary headspace in jars when canning (I provided links in the Description Box below the Video for reference). Otherwise, the 1" headspace for canning is to about the bottom of the threads of most canning mason jars. I hope this helps and Thanks for Watching!
