would you recommend maybe using a roasted chicken instead of a raw chicken? I have a roasted chicken carcass in my freezer and it would be easier to use that then carve a whole chicken

Duck fat is so luxurious... I don't plan on going hunting any time soon though haha

Instead of boiling a whole chicken, could I keep it simple and use chicken stock?

Yes, just go with something low sodium and see if you can find some rendered chicken fat for the oil

Looks great! But I've gotta ask, Where'd you get idea of using apple from and why? It's not something you'd really expect to find in ramen, at least not one that I've seen until discovering your awesome channel!

Apple and pork are a pretty textbook flavor combination, apple is used often in Japanese cooking as a way to add a subtle sweetness to dishes like Japanese Curry. Also Ivan Orkin utilizes Apple to make his sofrito for his shio ramen.

In addition to what Sam said, apple also does a great job soaking up residual blood/funk flavors that may have lingered in the soup

Very simple, 1:1:1. It was about 1kg of duck carcass, 2kg each of the chicken carcass and the chicken/pork combo
