Carla, What happens to the old course with student grades and assignments, etc. I still want to access the old course so I can answer questions a previous student might ask about missing assignments or rationale for his/her final grade.

If you’re the manager or admin of the Moodle site, you can duplicate the course, reset it as your new course, but keep the old course as is until you have completed grading or your students have nothing more to add. Let me know if that answers your question.
