Thanks for watching and subscribing, Deborah! I appreciate both! Since I made this video, Nesco came out with a new manual. In the new one, it addresses steam canning - but the way they say to do that is to use the low pressure setting. That's just an FYI, if you feel you need to stick with what the manual says on the topic. Like you, I am short on space and really don't want to buy another device. Since the method in this video fits with what the powers that be state need to be done with steam canning, I think I'll stick with this method. Thank you, Rebecca. I just water bath canned for the first time in my Nesco. I hope I did everything right! I made apple pie filling. I did sub fresh squeezed lemon juice for bottled lemon juice. There was no siphoning,. and it looks like all 5 pints sealed. 😁

Fantastic! I'm hoping to can apples tomorrow morning before church. I'd love to do apple pie filling but don't have any ClearJel, so apples in syrup it is! I'm glad to hear your apple pie filling turned out and you had no siphoning. I'll bet it's delicious!

In your video you said 8 cups of water to pressure can in the Nesco canner. I have a Carey brand canner (same canner just different name. In the manual for the Carey canner it says 4 cups of water and that's how I have used it for years. I verified both manuals and it says 8 cups for the Nesco and 4 cups for the Carey.....I wonder when and why it changed??

thanks for sharing your experience. Have you had your Carey canner for a long time? From what I understand, the Carey used to say 4 cups and increased it to 8. If that's true, my guess is that the canner could potentially run out of water when using just 4 cups of water with longer processing times. What has been your experience with that? For instance, if you run it for 90 minutes with 4 cups of water, how does that work for you?

Thank you for sharing! I see the option on the canner, but instructions are confusing. Only found this video about steam canning. I have been using low pressure for most quick waterbath, because just not sure about the steam button.

You're welcome! Have you done pressure canning with your Nesco? If so, the process is the same, but you use the low button instead of the high button. It is kind of confusing, though, because you still have to follow other "rules" that you follow with water bath or steam canning. For instance, you still need to adapt for altitude, by adding time on if you are above 1,000 feet.

I accidentally spilled water into the canner without the bowl being in there; the water came out the bottom; I'm waiting for the canner to dry out completely before I try it.
