Interesting. I’ve never seen that done before. I get an ear every time and I’ve never done that. But if someone is having a hard time achieving an ear this looks like a good technique.

Hi John, my dough tends to spread after out of the proofing basket, so scoring becomes a rush job, how do I improve its strength ? Thank you for your wonderful channel ❤

After the final shaping and placing in the basket, are you doing an overnight cold fermentation? If so, your dough should not spread out if you do that, it should stay well formed when you dump it out of the basket and allow you several minutes to do scoring at your leisure.

No I didn’t, have to replace them after 2 to 3 times cut. Need very sharp blade
