Today I’m FINALLY showing you & sharing my tips and trick of how to season a wok and maintain one at home. Yes, I will be sharing what wok I’m using and where you can buy it too. I’ve been using this wok about 1 year now, and I think I will be settling down with this wok for the next few years if not longer. I’m super happy with the quality of the wok, I can tell it will last a lifetime! Honestly, this wok is a bit pricey but after using it for a year, I think it’s worth it. It’s more expensive than others out there because of how it’s made and how they handle the carbon steel. It’s really high quality. These woks are hand hammered, 36,000 times. Can you believe it? It’s an art. This wok is a bit heavier than other woks I’ve been using and honestly that’s only downfall of this wok for me. It’s heavy because of the material they use, so I won’t complain about it. I can still hold and shake the wok no problem, I’m just so used to using super light woks before. The left one is large size, 34cm (4.2lb) and the right one is small size, 32cm (3.4lb). Another thing you need to remember is that this wok is rounded bottom, so I don’t recommend to use on an electric stove. Also, it will be hard to season a wok with electric stove to be honest, so if you have an electric stove, buying a seasoned & flat bottom wok will be better option for you. I seasoned my wok according to the included instructions, and it was horrible. I watched a different KZbin video to season it, and it was horrible. I found this video, and it was the quickest seasoning ever, and my wok is perfect. You are awesome.

I just got a carbon steel wok and a 75,000 btu burner and used your method and I thought it was superior to others I saw online because you added the part about cooking junk veggies afterward to get rid of the metal taste. Afterward, I made beef bulgogi and it was some of the best stir-fry I ever tasted. Thanks for your tips in this awesome video!!!!

1. Scrub clean the wok with light dish detergent and dry 2. Heat the wok about 15 mins over high heat. Make sure all of wok turns blue 3. Turn off heat and let cool 4. Turn on heat to low and add oil. Wipe oil evenly on the work for 3-5 mins 5. Turn heat up to high and repeat a couple of times. About 2 mins 6. Once no more oil is coming up. Turn off and let cool 7. Use old vegetables (cleaned) and stir fry it on high heat 8. Cool the wok all the way and wipe off excess oil

I have had my oldest wok since 1978 and my newest is only about 10 years old. I gave my in-between wok to my son several years ago. I have a cast iron wok that is so heavy that it is awkward to use so it just takes up space. As always, an excellent video!

I have an electric stove and just bought a cast-iron wok. One of the ways you can season is by putting it in a hot oven @ 500 or 550 degrees, to get the black color overall. it worked very well for me.

but for anyone having carbon steel, induction and electric stove is really hard on them, they will warp it, so you need to start slowly when you season and even when you cook preheat it all the time, and always buy a pan that is the size of the inner circle of the heater in the electric stove or the induction.

This was very informative, thank you. My wok formed black burned like marks at the bottom when I seasoned it but for your video it appears to be normal or the desired out come. Mine is not as uniformly colored at the bottom though, I still have areas that don't have the coating I guess but you made a point about constantly wiping with a towel to evenly spread and I think that's where I went wrong, I place the oil in there and walked away for like 5 minutes lol

I followed the process and seasoned my new wok. I sliced a small sweet potato and cooked it first, to throw away. My first egg looked a little burned. My 23 year old son walked into my smoky kitchen and immediately ate the egg. Hopefully, everything will get better from this point. Thank you for the video.

My issue with cast iron is that you want to eat your food hot and immediately but as she said quite rightly, when you clean it immediately afterwards it cleans best.

That's why in Chinese restaurants the sink and gas stove is next to each other. In fact, some of the design of the gas stove allows you to wash on it and then pour the water out on the stove and it drains the dirty water away.

I learned this way from a very old video inside a Chinese restaurant kitchen. I use this for cast iron as well. You do need a hot gas burner and a good hood to suck out the smoke but it’s the best technique to season cast iron or carbon steel by far. The oven method is for suckers 😜

Thank you thank you! I have a carbon steel fry pan that I love but it got sticky spots from when I tried to reseason it after someone put it in the dishwasher! I don’t think the oven method works. I think I just need to spend an afternoon over my stove and season it by hand like you did with that beautiful wok!

Thank you for the vid. I just found your site. My wok had never been seasoned properly. So I scrubbed real good got it as clean as could and the went through your steps. Looks so much better. Had to do it on coals because no smoke in doors. I felt that it was real old school. Ha ha ha.

Oops I poured too much much oil by mistake and the middle part looks like a wrinkled thin pancake. I waited for it to cool and rubbed with a paper towel but I am too late to restore its original lovely patina. I dont has gas anymore but your instructions are the way I was taught and has worked for me for 45 years. I hope that I wont have to scrub and reseason now. Please advise and Happy holidays to your amazing channel.

I bought a very plain stainless steel wok, no complaints so far but should I upgrade?? No non-stick surface, but still so easy to clean. And it's so satisfying using a wok - the shape, the way the food stays in a neat little circle, the heat pattern... 😍 Thanks for sharing!

You should have both stainless steel and carbon steel wok. They’re good for different applications. Carbon steel just takes a bit more work.

So you should season every time u cook it correct? Not the potato part but season every time you cook and oil it afterward to protect it. You can also make stainless steel non stick by seasoning it like this before you use it also. Learned that when I got a job assisting cooking classea

Thank you for this video! I recently bought a new woke but it says it has a Titanium coating for improved stick resistance and durability. The Use & Care instructions only advice to wash the new woke using warm soapy water and then to dry and apply one tablespoon oil. Should I still go ahead and season the woke as you have demonstrated?

To prevent rusting on teh base of the wok, is there need to oil that at all? For my carbon steel frying pans, I've done this. But I seasoned those in my oven so they weren't directly exposed to the flame. Would appreciate the advice here.

The smelly stuff won’t stick to the iron/carbon steel if you wash throughly with hot water with scrubbing a few times.

I seen that you used wood utensils. Do you prefer wood over metal? I’m new to the wok and I have metal utensils and it seems like I’m just ruining the seasoning (by scraping it off) when I use the metal utensils.

you can use metal or steel type of utensils, make sure they are round formed and that you handle the utensil well; not hack n slashing in the wok, but handling with care, not trying to scrape the seasoning. you will get better at it and faster. usually i try to avoid flat metal/steel utensils for wok because its going to scrape no matter what. if you use wood, you are much safer, and as a warning plastic will just melt so stay away from plastic utensils. its bad. even if packaging says its for high temp.

That's so pretty!! I really want one! Thank you for the super clear instructions! So you're NOT supposed to wash it... (with soap). Is it heavy?? Thats what I find really hard, the ones in shops are so heavy! That doesn't look heavy? And it'll be used on a portable stove so that size looks perfect for one (or two). Holy crap $180?? Okay that will a treat type purchase! Can you comment on using like metal spoons and stuff? Will that scratch it?

WOW you really wok your talk... impressive and informative ++... would you get a more beneficial i.e. thicker or more permanent maybe even more healthy seasoning with a high saturated fat such as 100% pure cocoa butter rather than an oil high in mono- [as in avocado] or poly- [as in peanut] unsaturated fats? Also is a round bottom preferable to a flat bottom wok for home cooking? Thank you gratitude to you for making your joie de vivre our joie de voir....
