That thing is a beauty. Congrats Joe! It’s insane to see how far you’ve come along, from backyard grilling to opening up your own food truck. It won’t be long until you have your own brick and mortar place. Congrats again Joe, keep killing it!

Congratulations on your new venture. I wish you great success. America is a great country. Where else can a guy with a PBC, a camera, and a love for cooking and sharing his passion can graduate up to a huge offset on a trailer and open a food truck? Awesome! If my daughter gets in to UT’s Law School we will be driving out I10 through El Paso for sure. Keep up the good work

I run a 24*65 elevated Shirley. If you build a ladder with your splits you don't need charcoal you can use a weed burner. Also you can save leftover butcher paper to put under the wood for future lights with the torch.

I'll try that next. Thanks Kipp!👍🏼

Joe, your an Animal. Wow 👌 thats a " No Fool'in Around" Smoker ! Here in L.A. there are people using big tanks to make smokers, but, nothing like Your's. Top Notch there. You should Proud to roll that Big Puppy around. Be careful towing with wood baskets full, might be lop sided ? I'd load all my wood and accessories right in smoker to travel to competitions. Extra slepping I know, but. A balance trailer is a mudt on a long hall...Can't wait for video of your first cook on that bad boy ! Gonna be Great for sure. Good luck on Hot Truck Project.
