The Sage machines use a 54mm Portafilter. This tamper is 53mm. Surely this will leave a 0.5mm non-tamped zone around the edge?

They are designed specifically for Breville baskets, this isn’t a worry. Just like how 58mm tampers are actually 58.4mm

I have never been quite satisfied with the coffee flavor from my 870xl. I do experiment a lot and it keeps getting better. I purchased the distributor like yours and finally all the hard work and testing has paid off. It appears I was not getting my tamping correct nor my distribution, as now I get perfect pulls every time and they taste fantastic! Thank you!

That's too low. It removes way too much coffee and the depth is unnecessary low. Meaning that depending on the grind size you may not even be able to get 18g into the portafilter at that depth

Very well done! This is the only way to set a distribution tool to the minimum depth. Should you trust the dime rule for clearance, simply put a dime over the ground bed, lock in the portafilter, then set the distribution tool to dime imprint level. Bang, it’s done. Lastly, adjust the dose weight to reach this level. When done, adjust grind size for perfect extraction. Compensate weight of the dose by the roast level. Increase dose with light roast, decrease with dark roast. Success guaranteed! I have never change the depth of tool fore the last 3 years and probably never forever. No matter the brand of your machine, size of basket, batch of beans, follow this procedure and you will be in business.

You may be amused that I found a use for the razor trimming tool - I used it as a template/guide for setting the depth of my puck tamper. I put the top of the razor on the top of the puck and adjusted until the razor edge came against the base of the puck. The depth came out to ~.75mm as well. I like your approach better, but had to share a use for that razor...

Hi. Interesting video. I have a couple of issues here. First is the tamping weight and distance is directly related to the dose of coffee you use. Eg 16g v 18g will result in different tamped levels in the basket unrelated to shower screen. Second is that even different brands of coffee at a similar dose and grind tend to have a marginal difference so you’d need to recalibrate every new coffee. I just use distributer and adjust to gut feel and also to vary tamp amount to get longer shorter shot when the ideal grind setting is between settings.

I dial in MANY different coffees every month. As long as you are using a dose that is not too low (causing the tamper to not make contact), you will be able to dial in using grind size. A standard "ideal tamping pressure" of 25lbs or whatever it was has long been debunked as a myth. CONSISTENCY is what's important. But you are absolutely right, if your grinder is stepped and you can not precisely dial in using grind alone, slightly adjusting tamping pressure can help you dial in between grind settings. The same thing could also be done by varying dose while keeping tamping depth the same.

I think this neglects that the coffee will expand and I've found setting to this method the puck sticks to the shower head and issues ensue. I would take your tamp a little further to avoid this and it can even vary by coffee type as some expand more than others.

I found the easiest way to check is to simply put the tamper on the portafilter coming with the machine after you finish prepping. As long as the line between the silver and black part of the tamper is aligned with the basket/you cant see the metal part, you are good.

I loved your video about the Tamping Pressure and that it doesn't matter much once 15lbs have been achieved. As this always is a huge variable, we followed your link and bought the palm tamper which is on its way now. Are you able to enlighten me how to set the depth for the palm tamper to achieve at least the 15lbs, better 20lbs so we have some wiggle room for different coffee types? Do I test it on a scale?

Pressure applies at the set palm tamper depth will solely depend on how full the basket is. You can try to measure on a scale, but make sure that you’re looking at the number when you’re still compressing the coffee, and not once you’ve already hit the tamper stopper

Excellent! This is exactly what I need. One question though: what is the dosage that you used? It appears that you have premeasured the beans. I have found the Barista Express is not very consistent with its dosage, varying up to more than half a gram. For adjusting the depth of the tamper side, I think the quicker way is to use the "Razor" tool that comes with the machine. It is set to the proper depth. Thanks for the video.

I'm using 17.5gr dosed directly into an empty hopper, then I grund until empty. That is the most accurate method I have found on this machine. The razor tool is useful, but measures a specific volume, not a specific weight, which leads to problems in determining brew ratio

Need to dose the appropriate volume for you basket :) 18g may not be the correct dose for every coffee, depending on roast level and origin the densities can vary drastically! If you're undertamping, you need to increase dose or get a smaller basket

I had that problem with beans that were particularly oily, especially when grinding finer. The stuck grounds never amounted to more than .25 grams, though, and didn't seem to affect the shot.

If the grind size steps are too big which is usually the case on a BBE you can make tiny adjustments so it tamps harder/softer or you can up/lower the dose of beans. It's all depends on what you're looking for and what tastes good to you and others

@@matthewwilson3078 hey Matt, I had this same problem with my breville smart grinder, I couldn’t get a fine enough grind at low settings. I opened up the grinder and took out the inner burr and made the grind size smaller, he has a video on this. I adjusted the internal burr to #2. Now my steps between grind sizes is less drastic of a change which helps dialing in shots. I grind on a setting between 15-10 now because less than that will start to choke my machine. I hope this helps!

Hello. Quick question. I use fresh coffee everytime but my extraction time from the moment I press the button to get around 36g out is about 15 or 16 seconds. I put 18g of coffee in the grinder and I have the internal grinder also set to the minimum setting so i cant go any finer. Is that just the coffee or is there anything else going on? Thank you. 👍

That is way too fast of an extraction. Try: 1. Increase to 19g of coffee 2. Tamper harder 3. Check your grinder for defects - spread the ground coffee on a paper towel and check the consistency of the grind. If there are to many coarse bits your grinder may need servicing. Or buy a better grinder. 4. Try a different roast. Darker roasts should grind finer.

You can adjust the top plate of the grinder inside the burr grinder; default is at 6 and it’s a range from 1-10; where 1 is the finest setting.

I went ahead and set the tamper depth but when I lock in the portafilter, it doesn't show the dots of the shower screen, just the circle that's in the middle. I hope that makes sense! After doing this, I'd recommend adjusting the dose by increased the amount of coffee ground until the tamper cannot go all the way in this 7.5mm position. Why? Because if you don't maximise the dose but set a volume, you can have air pocket inside the puck

The distributor side of this tool has the exact same functionality as the Jack leveler, so yes! Just like the Whole Latte Love folks I dont even tamp anymore. I simply set the distributor to the correct depth and spin until there is no resistance. Perfect, consistent results every time

He didn't actually talk about the benefits of the palm tamper. It's very heavy and makes even tamping much easier than the cheap plastic one that comes with the Breville. Plus the Breville one doesn't allow you to be exact. The black part of this tamper doesn't go in to the basket so it means that his 7.5mm will not go any further.

It wont impact the quality of your shot, I actually ONLY use the distributor side to do all the tamping. Just make sure you are rotating the distributor from the second it touches the grinds, and all the way as you press down as to avoid tamping in a star shape from the distributor blades (that would affect shot quality)

I've experienced different variantions of dosing when it comes to the density of the coffee been. Sometimes its messes up the depth when you are used to a high dense bean then decided to switch to a low dense bean, which in turn takes up more volume, so I have to lower my dosing for lower dense beans. So looking for advice on this.

You can change your dose slightly like you're doing to adjust for these variations, but the main variable for dialing in should be grind size. If you are having trouble fitting 18gr in the basket, grind finer. If that results in too slow, or no flow, then reduce the dose.

I actually did measure my tamp side using the razor depth but you want the distributer side at minimum to leave enough room between the the grounds and the distributer end to get an even distribution if set too deep into the portafilter it will distribute the grounds in too tight leaving the grounds uneven within the puck causing an uneven extraction plus other than distributing and leveling the grounds the whole point of the depth on the razor is for the correct tamping depth and i believe it applies the same pressure as using 30lbs of pressure w a regular tamp.

I can’t get the link to the dosing funnel to work. I mean, it works, but it takes me to a tamping mat. Can someone tell me which brand the one used in the video is? Thanks!

Hi there I hope you can help me out here. I did exactly what you did in the video but I'm working with Barista Pro instead. With a full does of 18g, I realise that there's just too much coffee, I can't seem to be able to tamp the coffee further after adjusting the level of the tamper...

You're likely grinding too coarse. The finer you grind, the more beans you can fit in the portafilter. If you're choking the machine by grinding finer, then you will simply need to lower your dose for those beans. Different beans grinding differently

thanks for the advice, I adjusted the grinder to a finer setting and it did work out well. Just one more question, once dialled in, what's the ballpark weigh of a double shot using the double shot button on the barista pro? Is there a range for it?

I watched a video from Aju's Cafe and I think he has the best way , you just adjust tamp till the razor tool no longer scraped coffee :)

I measured the Razor with a caliper/vernier and it seems to be around 6.6mm so I've set the tamp to the same height

Not if you are dosing correctly for your basket size :) But yes, this is definitely something to be careful of when using a puck tamper

I'm having the issue of 1. When I press it against the shower screen some grinds stick to the screen. 2. Using a different bean, requires a different grind size, and requires a different adjustment on the palm tamper/distributor. - while trying to adjust my grind size with a scale weighed dose, fine or coarse, I have to adjust the tamper as it takes more or less space in the basket adding another variable. The screen method doesn't work for this as when I grind fine, it takes less space in the basket, and coarse, more space. 3. With the more or less space, any adjustment I made on the palm tamper now has to be changed. Am I doing something wrong? I'm having a very difficult time adjusting it and had better results using the regular tamper.

This is the downside of a palm tamper, it only works well when fully dosing the basket. However, simply adjust it to the point where you are still getting good compaction of the puck, or better, increase your dose so it fills the basket and doesn’t leave too much headroom

I have the same machine and tamper, when I did my test. I still have the shower screen screw indent on the puck. (before brew) Is that okay? Should i tamp it even lower? thanks D.

Yes, you should tamp lower until you just barely no longer see the indent

So with the Distributor set to minimum it’s function as almost nil. Would it not be better after the Tamper is dial in to adjust the Distributor to be more functional? Most of the European or American Distributors are more than $100. The Chinese are under $50 for comparison. Just to be clear your concept is dead on for the final product. Thanks good video, Kevin
