@@TJMurray025 keep in mind your local county or parish in Louisiana. Their health department will tell you exactly what you need to get operational they are there to help and make sure your food safe. Just tell them what you’re thinking about doing and ask them what you need to do.

@@BBQSOUTHERNSOULTREATS I have a video about preparing for the weekend that goes into this pretty well. You should check that one out. However at the beginning it is a bit of a guessing game. It’s about how much you’re willing to risk food cost wise. Start with very little but enough to make it worthwhile. Use ChatGPT to help with par levels. Example I know a brisket typically serves 10-12 people sliced and double that for chopped brisket sandwiches so I think to myself will I have that many customers? More? What about my other offerings will they be popular? Will they offset brisket sales? You gotta go in with realistic expectations and scale up each time out.

We where told we had to have a commissary what's the deal with that and that there has to some kind of event going on in town we where told we could not create our on event???

@@robc1082 so the commissary part is true, there are kitchens to rent all over the city to use for prepping food items. We have rented them usually they charge by the hour and have a 4 hour minimum. I have seen people get away without using them (nobody confirmed their use) it’s going to be dependent on how strict your county is. As far as creating your own event I have never had an issue but once again it’s going to depend on how strict your county is. My advice is to do as much as you possibly can to meet their standards, apply for the proper permits and if they say no they say no. If they say yes you know your good to go

I would also add there is usually farmers markets and vendors markets throughout the city we have served at several of those.
