Oops, I already forgot. For the needle thread, I use a regular all-purpose sewing thread that works well with a variety of fabrics. As for the needle, I typically use a universal needle, size 80/12, which is a great match for most lightweight to medium-weight fabrics. The size of the needle might change depending on the fabric's weight and type, but 80/12 is a good starting point for shirring.
