I'm gonna have to try the coffee cup thing interesting to say the least. Now, I've always understood it to be that in order to sharpen or reduce a steel you must challenge that steel with a harder steel or in this case a much finer harder grit to reduce the steel and recognize this by the edge of your blade. How can you do that with a kiln fired clay cup? Please correct my understanding if I'm wrong. I'm going initially with a 1000 grit whetstone. And then adjust accordingly from there based upon the quality of edge that I achieve with my Japanese Cutlery.

So, I've always been told that when sharpening a knife that you must push, pull the knifes edge into your whetstone so as to push, pull the metal back into the knife otherwise you're taking more metal from the knifes edge than it is totally necessary to do to achieve the sharpest edge possible. Saying that's why you use the push pull method instead of push push or pull pull. Do y'all get the gist of what I'm trying to relate 🤔 to you? Your thoughts please.

I recently bought two different sharpening stones but wasn't sure how to use them. I'm still not sure what type of stones they are...water stones, or one of the others, but your video showed me how to use them properly. I appreciate it.

No some stones you can use oil some I believe dry. But if you have a oil stone don't put water remember oil & water don't mix!

nope. you can use water on oil stones and oil on water stones but once you use oil on any stone you can ONLY use oil on it from then on. I use water with a drop of dish soap as a lubricant for all my oil stones and whetstones, highly recommend it. If you go the oil route, I recommend food grade mineral oil, you can find it at Walgreens/CVS for a few bucks or amazon. don't use motor oil or petroleum products for anything that is going to be in contact with your food. also Ceramic stones and Diamond plates don't need oil or water. also some Whetstones are so dense that they do not need to be soaked and or soaking them could cause them to crack. these Whetstones are called "slash and Goes" these only need water to be on the surface of the stone.

You have to make your knife with water, and also in the stone should be with water so the heat accumulated from the sharpening doesn’t affect the sharpening of the knife

I'll suggest that you missed the cheapest and by far the best way to sharpen a knife. Take a coffee cup and turn it upside down. On the bottom will be slightly course ring upon which the cup sat when in the kiln. Ten "draws" across this surface and I can cut paper. It is the fastest and the best method I've ever found.

I do not like this method. I went to Johnson and Wales and I received a full set of knives upon graduation. The heel of the knife will not fit into the machine and eventually you will not be able to rest the blade flat on a cutting surface. The heel is the thick part at the base of the blade, after the handle. I use Japanese style blades now that do not have this and I fine it is much easier to sharper and maintain. If you do not take it to a heavy duty grinder every now and then , do not get the traditional thick heel that German brands typically have if you are going to use machines. I also found the machines will go through your expensive knives much faster too. Nothing like a good ole whetstone in my opinion.

Great video my only Issues are Im not cutting paper. Most may not know skinning knife dull quick. Unlike a butcher's knife. Need clean cut . Knife that will cut paper thin that will remove the skin from a tomato.
