Love the smoke house. It looks so nice. Mr Rain/raincountry was talking about re-purposing bed rails last week, I could see those working in the smoke house as well.

We had a packer on Christmas with tons of family and friends. It was the first time I had ever cooked one. 17 lbs and it was a 6 hour smoke at 225°F until it reached it's stall at 170°, then a 18 hour low covered bake at 220°F until the internal temp reached 198° and a 4 hour wrapped rest in a cooler. It was amazing and everyone agreed we are doing it every year from now on. I smoked it on a grill... and I was struggling to maintain the temperature on the grill which is why I brought it inside to the oven for the rest of the 24hour cook after the stall. I don't think it hurt the flavor one bit.

I used to smoke my turkey on a Weber grill and always finished in oven. (Same reason, it was hard to keep consistent temp in cold weather). Taste was fabulous!

I love smoking a brisket but have never done one bone in. I'll be thinking on that and maybe give it a try. I've also taken them to a temp of 203 for fall apart brisket that's unbelievable. Thank you for sharing... time to get the brisket out!

Where I live since we have so much mesquite that’s what I smoke/bbq my briskets (and other meats) with. Usually cook it for twelve to fifteen hours.

Here in North Central Indiana it is -3 feels like -10 with the wind chill . I always have to laugh when they that. Because if it feels like, ain't that the temperature 🌡️.

This smokehouse was built in 2024 at Pecan Grove, is not yet fully finished, and Danny is still working to master its quirks. Obviously, both of them are delighted with what it has done so far.

I’m guessing the seasoning is maybe onion powder, organic garlic powder, salt, kosher salt maybe and like Redmonds and black pepper is that close to what you season your beef brisket bone in with I really thought you would share but I guess you decided not to. I gotta guess what you did.
