This was amazing! I followed your recipe to the letter and this meal came out fantastic!!! You really nailed it. The "bark" was a treat all by itself. I also like the way you described the cut itself, with a video picture. I went to my local butcher and asked for the Boston Butt and was shown exactly what you have here. The rest was following what you did to the letter. REAL NICE JOB. My family really enjoyed every bite. Now my family roots comes from Knoxville County, Knoxville, Tennessee. I remember my granddad having a pork Bar-B-Q meal many years ago - and your method of yours brought back some great memories. Thanks again for a great presentation.

I made the sauce and the pulled pork and took it to a church dinner. Had people that didn't even like sauce compliment me and ate it heartily. Entered a pulled pork in our local festival with the sauce and won first place.

This is awesome! I am North Carolina boy that loves what we call Eastern N.C BBQ. FYI... The mustard base is a S.C. style BBQ which is also really good. N.C more of a vinegar base with crushed pepper, brown sugar, salt, pepper, and little to no ketchup with meat chopped and not pulled, but I have to say I really like what I see here. The apple juice is something that my Dad use to substitute some of the vinegar and brown sugar. I am definitely going to try and duplicate this with my recently purchased Cabella's pellet grill. I have never cooked a butt to that temp (195-205), but I am going with your recommendation. You rock my man!!!

Actually, I think most folks around here apply the vinegar/apple juice / brown sugar/ crushed pepper sauce during the cooking process and really depending on most of the sauce added after the chopping process. The best is when you see little tiny bits of bark for excellent flavor in the chopped bbq. (Bill's BBQ in Wilson, N.C. has mastered that) It is better to let it sit a little while in the sauce.

I confirmed this with a buddy of mine that cooks several hundred pounds every year for the Mason Lodge fundraiser here. The only thing he added was that they put the chopped Q in a pot and put it back on the grill at low temp to kind of marinate. They have some of the best around...

Bass Awkwards on where the "Butt" and the "Picnic" come from. The "butt tends. to be higher up near the back, whereas the "Picnic" tends to be the upper, front leg of the hog.

Thanks for the vid; quick question. I tried my first bone in butt this summer and smoked it for about 10 hrs at about approx . 190 - 200 (smoker temp - didnt have a meat thermometer). The butt tasted great and fairly tender but did not fall off the bone - i had to slice it or cut it off the bone.. ..... do you think I should have taken it out to 12 hrs.? or how to you know if its long enough time? thx

Hey... new smoker. Question, could you please tell me your temp setting during your cooking. I think I understand that you smoke it all night and the only time you turned from smoke was to 350 .... is this right? Looks great, I want my to look the same!

Great video with southern charm and all, thanks! I'm heading to the store later to get a pork butt and smoke it. But i'll use BBQ sauce instead of the carolina. I made the mistake of watching this before breakfast and now I'm starving GOTTA GO eat!!

Is it necessary to wrap it and put it in the cooler? I've never done that before, pretty interesting!

yes it really helps to finish the cooking process and to hold in the juices

Do you ever wrap the pork in foil to get it up to 200 degrees? I always have to because I'm pressed for time but I want to not wrap it next time...also love the Yeti what is that a 45?

You know, even after 7 years I’ve been following these instructions, although now I use a Weber kettle. That sauce is tremendous too.

Getting a smoker just like yours soon. First thing ima smoke is pork butt and ima use this video for it. Excellent looking meat. Mouth watering watching the end.

Good call on the Cattleman's Carolina BBQ sauce. The sweet hits first, then the other flavors and a little heat. It's a keeper and I may mix it with my homemade sauce and see where this goes. Thanks
