Thanks, I was using the same mortons you used for the trout but then I was told the pickling salt is made for brines so I started using that.

They are a boney fish so smoking them is the best way to deal with the bones. Buffalo are the best tasting fish smoked IMO. I'd even take smoked buffalo over almost anything else cooked fresh.

Best chance I would say is with twister tails in a river. You get them in the mouth sometimes and snag them the rest. They do taste great so I would recommend it.

@@frankracz6736 Yeah but it's pretty rare but I know of 2 people that have caught them like that. They do feed on shad. They are the best all around bait for someone that just wants to catch a fish.

People snag them a lot when they jig for walleye. The holes in the face look like it may have had a hook in there that rusted out. That big missing patch I have no idea about though.

Put whole kernel corn or bread on a size 4 hook, chum a couple handfuls and wait. Sometimes takes a while to get a bite. I'll make some tutorials in the spring.

I tell you what mate, you have inspired me to give carp a try in the near future, I know where the dark meat to avoid is now after watching your video. I don't have a smoker though, how else would you recommend I cook it?

Smoking it is the best but if you marinate it in teriyaki sauce and grill it is good. They are really an underrated eating fish. The buffalo are really 3 different species. They are interesting and native to north america.

Interesting I never knew people smoked them. I've seen recipes with garlic and onion powder which I want to try but didnt this time for simplicity. I can't decide which I like more. They're both really good but completely different meats.

Yeah I try to be gentle with any fish I'm gonna throw back. But there are lots of people that are sensitive about eating even the small ones. If we ever have another depression guaranteed everyone will be eating carp. They are good fish if you can get past the bones.

You can use 1 cup if you prefer. The wet brines aren't very salty since your rinse most of the brine off so I like to use more salt.
