Hey Everyone, Today we’re going to start a new series called will it smoke and we’re starting it off with a bang by trying to smoke roast coffee. We’re going to see if we can impart smoke smoke flavor into coffee beans that we are going to fresh roast on our Char Griller Akorn Kamado. Why would we want to do this? For one there's just something about cooking outside on our Akorn this time of year that just feels right. Maybe most importantly we’re gonna give it a shot because how will we know if we can or cant if we don't try, so let get it goin. To begin with light a single chimney of charcoal and get it entirely lit. Once we drop that down into our Akorn we’re going to want to start adding some smoking chips to the fire. You can use whichever smoke wood you like, today we are going to go with white oak. Also the reason we are using wood chips is because I know that these chips will help us generate a lot of smoke very quickly and if we have a shot at smoking this coffee we will need that capability. Get yourself a cast iron skillet, today I’m using an 8 inch model, a whisk, a colander, and some green coffee beans. Now that you're all set put the skillet on the grill grate and let it get hot. Once it is warmed up go ahead and add as many coffee beans to it that you feel you can stir and continuously agitate, for us that's gonna be about half a pound. From here on out just focus on stirring the beans and about every minute close your lid for 10 or so seconds to let those beans soak in that smoke. After about 15ish minutes you should start hearing the first crack, it’ll sound like popcorn. If you want a lighter roasted coffee you can take your beans off now but for a more medium roasted Coffee let it keep going until you hear a second round of cracking. At this point you want to cool your beans down immediately. We’re going to do this by tossing them in a colander. Tossing them does two things, one is it helps the beans cool more quickly and the other is as the beans are tossed in the air the husks will float off and not remain in our coffee beans. From this point you just need to set your beans aside loosely covered for a day so they can offgas and finish the process. After that grind them up , make coffee your favorite way and prepare to have some of the best coffee you’ve ever had, and you made it all yourself on the grill. I’ve done this before, only I did it over my open pit. When it came time to cool the beans I tossed them in a metal bowl with about a 1/4 cup of rum. I then spread them on a pan and popped them in my oven on the lowest setting to finish/dry them The smell was amazing. The rum helped bring out the slightest smoke flavor and imparted a sweet flavor to the bean. Hands down the best pit roasted coffee I ever did. I also tried it with whisky and bourbon but the flavor the rum gave it was much better. If you try it I hope you enjoy it.

I have an Akorn Jr and it's the perfect size for doing this. I've run a couple batches already. No smoke, but the roast came out great. If Char-Griller ever came out with a rotisserie for the Akron, it's Game On!

There was a coffee shop down the road that sold smoke roasts coffee call Camp Fire. It was amazing. You could taste the smoke. Unfortunately they didn’t survive the 2020 lock down. They had the best coffee. I wonder could you cold smoke them before roasting on that high of a heat? Might get that smoke flavor in them then.

Maybe if you soak your beans in some water that some wood chips were in, it could bring out a smoke flavor, or even just burning some wood to create a smokey water to brew with your beans. Best way to do it is to make campfire cowboy coffee, literally take your ground up coffee beans and throw them in an old time camping coffee pot with some hot water,

What if you cold smoke the green beans for a few hours then roasted them. It might, then, have a smokey flavor.

Chris Cable it’s possible, I would recommend after while they have oils on them. That would be an interesting experiment and worth a shot

You need some machine that would do the stirring while roasting so that you don’t have to open it every few seconds for manually stirring, this way you would make sure that the beans get smoked while roasting.

Got that follow for the hat alone. But I did want to see if coffee can be smoked. It also makes me wonder if you cold smoke like you would cheese for a longer time then roast if it would get smokey flavor.

I wonder if you’d get more smoke if you’d roast the beans in the colander instead of the skillet. Just so the smoke would be about to pass through the beans and not around the skillet.

What if you smoke at 225 in an offset or pellet smoker for an hour after roasting the coffee beans? Have you found a way that actually gave you a smoke flavor? Also, have you tried smoking roasted and already ground coffee? I don't want to put smoked beans through my grinder to make all the following grinds smoky.

Ya know, I think you might have something there with cold smoking already ground coffee, if it’s freshly ground there would be more oil for the smoke to stick to

Steven Spahn after drinking it I’d probably call it dark, but that’s about what I normally drink. You can always stop them at whatever point you normally like your coffee roasted to

J s I didn’t go much past the second crack but admittedly I’m new to roasting my own coffee. The thing is the second crack wasn’t as...unified we’ll call it as the first one. So maybe I waited longer than others would trying to make sure every bean got the second crack. Would you pull them right as the second crack starts then?

@@Cookoutcoach yes, I usually pull them 2-3 min after first crack which should be before 2nd crack. 2nd is more of a sizzle, soft crack, than the intense popping of first crack. If you're cold brewing - feel free to go a little darker but if you're brewing- the flavors of a lighter (pie 2nd crack) roasts will be much more robust and enjoyable.
