There's a trick to purging the air from a ziplock bag without a vacuum sealer: close the bag with just a little bit open, and slowly dunk the bag into the water. The water pressure will push the air out the top of the bag and gives a great seal when you close the bag. I like my steak medium rare (131 degrees is what I usually use)

Kent, first and foremost, the wagon renovation looks so incredible! Ya'll did an incredible job congrats! I love my steaks medium rare, all cuts, 135 degrees. I like how you did the twist on the Sous Vide method - I personally have not used that method but my bother swears by it. I would use the heck out of that Yeti cooler so please consider me a candidate. I loved how the pups ran when you fired up the torch! LOL! Hello Kent, I'm a Vietnam Vet just getting into Sous Vide cooking and love it. I like my steak at about 131 degrees and the way you cook sous vide means that I can have a great steak anywhere inside or out. I enjoy taking a chuck roast and sous vide it to taste like a ribeye. Delicious!

Grew up raising grass fed beef in OK. A well-seasoned medium rare steak with a crusty cast iron sear in beef tallow and butter is my favorite! Loved learning how to sous vide in a Yeti cooler! Thanks, Kent and Shannon!

I would like to thank you Kent for being the inspiration for many of my outdoor recipes... smoked jerky, smoked vegetables including sweet potatoes, but after smoking sweet potatoes I realized that I could make a smoked sweet potato pie. I also make pizza on a fairly regular basis, I even purchased my current smoker because it is more portable... I went with the Masterbuilt Thermotemp XL propane... the thermotemp gas regulator keeps it at a constant temperature... but still requires wood chips to be added every 30 minutes. Set a clock/timer for 30 minutes and add wood chips.. no power so I take it camping with me. Nothing like showing up on a camping outing with a 6 burner grill and a smoker. Eating like a king, with those around you whom you hold dear.

Medium rare for me. I've been doing the sous vide thing for about 5 years now and it is really the way to go for cooking tougher cuts of meat like chuck roast. When I see chuck roast on sale I buy a couple and cook them at 132 degrees F for 36 hours. That's right, 36 hours. The texture is amazing - like a high dollar steak. Pork roast cooked sous vide is fantastic. Using a combination of BBQ and sous vide makes some of the best, most tender ribs and pulled pork you ever tasted, guaranteed. If you want to learn more about sous vide I highly recommend the "Sous Vide Everything" KZbin channel.

I always learn a new twist on cooking just about anything from you. I use the original seasoning on just about everything. Haven’t ever tried sous vide. Another trail to explore. We like our steaks medium rare. Thanks for expanding our pallets.

Kent, thanks as always. Being a nerd, I did a home-built sous vides thing years ago using an inexpensive temperature controller, two ends cut from an extension cord, and a crock pot. My son felt I was being a bit too hillbilly, so he bought me one of the fancy contraptions for Christmas a decade or so back. And yes, I even used the zip lock bag and a straw (I would pick up some of the small hollow twizzle sticks when I bought coffee) to suck the air out of the bag. It's a great way to cook things to your desired doneness, and then put the color on afterwards. Great demonstration, and should I be the fortunate winner of the Yeti, I'll actually get a NY Strip steak or two and try it out over the fancy store-bought gear.

When Ken just passed the meat onto the truck, I actually snorted. Love this guy. He knows he's going to kill all the bacteria when he cooks it. And anything that could survive the flame is probably something he's already caught as a kid. Edit: forgot to say how I like my steak. Medium, unless it's somewhere I've never eaten. If it's a new place, I always get medium rare to test the quality of the dish.

Hi Kent and Shannon. Definitely medium rare for me and little to no rub except salt and coarse black pepper. I always regarded sous vide as too "oo la la" but you just showed us a very practical way to get it done. Thanks!

Outstanding! Probably the best way to "reverse sear" a steak but without the worry of over cooking it. I would prefer do grill it for a wee bit on a extremely hot fire to get a nice char and grill marks on it. Thanks for the constant inspiration Kent and Shannon. Peace

I always enjoy your videos. You speak my language - and I love to cook in the field for my team. I literally built a chuckwagon and bring it out on big jobs to cook. (Huge grill and blacktop) The team loves it. When the job is long enough - I break out the dutch ovens too. Play old country music - and even make my coffee in an old percolator kettle. Love your show.

My family and I all eat out steaks between medium-rare to medium. It makes grilling easier on me and we all get to eat at the same time. I have never attempted sous vide but you make it look easy so I am going to try this weekend. PS. my daughters love making cobbler with your recipe everytime we have dinner guest. What a great alternative to cooking a tender juicy steak! Sometimes it’s hard to keep your fire and coals going in bad weather, so this Yeti can give you a different way to cook that steak. Thanks for sharing so many different ways to create great meals outside of your kitchen 😁

I like my steaks so rare a qualified veterinarian could still revive them. Love that you treat the dogs first, and then yourself. True story My son is a Air Force pilot and he did his flight training at Vance Air Force Base in Enid Oklahoma. One of the pilots in his class cooked us ribs when we came to visit from Missouri He Sous Veid ribs for us and I’ve told everyone that they were the best ribs I’ve ever had! And I did drive 5 hours to see you at Silver Dollar City!

Love from Pakistan. This is what I always imagined good ol’ American living since childhood. Steaks, bbq, and farm life. Love some medium on ribeyes and medium rare on NY strips. I found this channel by accident while researching on how to do soups vide on cowboy steaks. I am slowly increasing the size of the meat as I experiment with soups vide.

While I prefer a medium rare, anything between slapping a branding iron on it to medium well works.. and yes, if I wanted it cooked more I would ask for a piece of jerky.

Good morning, Kent and Shannon!! I was raised a city girl and never knew anything other than well done! My husband showed me how great a steak can be medium and medium rare. That's how I eat them now! In fact for my birthday or mother's day I would rather stay home and grill out a good medium steak cooked by my husband!! Keep your videos coming!!

Today I was shootin the bull with one of the customers who regularly comes into my shop for some of my military surplus gear, and he suggested I look up Kent Rollins on KZbin. I mean it when I say, I'm really glad I did. This is great stuff. I'm going to look into picking up some Yeti coolers for my camping section. I bet I can sell those bad boys like hotcakes. Lastly, in reply to the contest, I love my steak medium rare, but a little less medium, and a little extra rare. Now I'm gonna see Kent's Cowboy Coffee episode. Y'all be good l. God's watchin. Thanks for reading, and thank you, Kent, for thinking up a good clean, family friendly show that I can watch with my teenage son. We're a camping and cooking sorta family, so this will bring us a lot of joy, that will be shared together. You're even bringing families together, here, Kent. Thanks for another great video. I have my reservations on this method of cooking a steak, but I will give it a try. Got to have smoke flavor so I will try adding some liquid smoke to the bag before I seal it. Now if I could just get me a pickup truck with electrical outlets on the back I will be set. Thanks for this video. Today people have so many things that they don't need. A simple way to multi purpose an item you already have laying around. I have been wanting to Sous Vide a steak but did not want to have excess specialty equipment in our kitchen. 150 minutes at 131°F for me. I love using this technique. I keep the water heater set pretty high and I can just fill the cooler from the faucet and top up with a kettle of boiling water to nail my target temp. (And check it after an hour or so to see if it has dropped too far.) Thanks for the great videos and encouraging words!

Hey Cowboy Kent, just found your channel through your cast iron seasoning videos. I used cast iron frequently back in the day and wanted to get back into it so I broke out some of my old skillets and they were rusted. Well I went ahead and restored them all and re-seasoned them and I went on KZbin to see how others were doing it. Glad I found your videos and I like your style sir. Keep on doing what you're doing. Got your cookbook. I really liked the stories you have in it. So it’s not “just” a book full of recipes but also makes for a good read! I got a vacuum sealer that works on the 12 volt socket in your truck. Comes in handy if you butcher you deer in a he field… Ever “cook” in your attic? I do my jerky in the attic for 5-7 days. Meat gets perfectly cured and dried, not gooey like from a dehydrator…

Kent, your videos are always so entertaining and informative. I live in Iowa where the angus is superb. I will give this a try next time using high heat and smoky wood chips, as well as a good rub. I know you like medium rare but we do medium in our house. My sister-in-law from Denver likes her steaks to “moo”, so she will get the rare ones. I love your way of honoring the Lord and our service people. Thanks!

I used to order my steak well done. Then I met a girl and her ranching family taught me how to eat a steak. I’m a medium rare guy now.. Thank you both for the great videos and for your inspirations.

as usual you do a great job. i did a chuck steak sous vide style once and the wife and i loved it. i usually go for 132 degrees on mine when doing steak. the great thing about sous vide style is that the meat stays juicy and there is a lot of pink inside compared to grilling or frying. slow and sear method on a grill can achieve more pink inside but not like sous vide. medium rare is what this house hold loves. god bless and keep up the great work. if ever in Texarkana give us a yell...

Kent, that was a great video as always. I tip my hat to you for making a water cooked steak look really good, but there is no replacing a medium rare steak cooked over hot coals. Thank you and Shannon for what you do.

We love cooking our steak using Sous Vide and the Food Saver. A quick little sear in the cast iron and it's dinner!! Great video Kent and Shannon.

Medium rare Mr. Kent and my first time doing this method was with a water trough heater in an igloo, in the fall, with fresh back strap. Like you said,but we had a camp fire and wooden hickory limb grate, turned out beautifully with a lil char and smoke. God Bless and see ya on the trail - Humbob

My daddy 🤠 RIP 🙏was a great cook he loved the outdoors ,camping ,cooking hunting fishing etc and was very good with animals and maken food...know it's my turn am very happy I finally learned how to cook outdoors and do chicken,burgers etc thanks to my mom 😊😁😁 hope I learn from ur videos also!! Awesome video. I have been wanting to try the Sous Vide method but did not want to invest in a machine. I, like you, cook by fire and did not want to invest in something that might not be what I want. I already have a yeti cooler and I can surely heat water. Thanks again. Oh, BTW, I like my steak medium rare.

I love my steak cooked on the rare side of medium rare. And when you eat outside, food always seems to taste so much better that when you eat in the house at the table. I love your videos and recently moved from Bridge Creek OK after 27 wonderful years. The Lord sent me to the Pacific North West or the Pacfic North Wet as I call it. So cooky, I've made the decision to write a novel. Granted it's not a western but a midieval fantasy. But I am putting Chuck wagons in it, along with dishes I've cooked in my own cast iron skillets. Whether or not it gets publish is a separate thing. But thank you for teaching me about mobile foods from the cowboy days.

I love Kent Rollins! His videos and cookbook have inspired me to cook more with cast iron. I also cook in competitive steak cook offs and a Yeti cooler is a great asset to have to keep everything cool. Keep making the videos, Kent, and I will be sure to watch them.

I love all these recipes I do them all the time at home can’t wait to try this. I got to say the best steak to me has to be a good medium rare. I just realized I drive through Wellington all the time cow trucking I will have to check out the coffee shop sometime if I can figure out a place to park the truck.
