Much to my mother in law’s chagrin last year, I spatchcocked our Thanksgiving turkey last year. She did hers in the traditional manner. My bird was perfectly cooked and on the table a full hour and a half before hers. This year, not only am I spatchcocking, but I’m putting it on the pellet grill. 😊

Spatchcocking makes all the difference! My family did the typical turkey in the oven. Nothing wrong with that, but this is one of my go-to methods.

I started spatchcocking my turkeys a few years back and was amazed how much better it cooked and in the flavor too. Only way to do them IMO!

I did this for the first time a couple of Thanksgiving‘s ago, it’s the only way to cook a bird! It cooks even and the seasoning gets spread more easily and thoroughly over the whole turkey.

Spatchcock then half it. Turkey halves are much easier to work with. Also I’d rather do two 12lb Turkeys over one of those giant ones.
