I tried this recipe for Thanksgiving,and oh my God I’ve never cooked turkey so good ,and I’m going to do it for Christmas again very tasty. I added a little creole seasoning and some Jamaican all purpose seasoning to mine.

Your technique is flawless. I used to prep 50 (smaller) birds every season. We used tree limb cutters for the spines. If you have a few birds to do it's worth the 20 bucks, and you can still trim ur trees. 😁

Or gardening shears. I just prepped my 14lb turkey with kitchen shears. If I do this again I’m buying gardening shears. It was a work out. Lol.

I use the back, neck and giblets with onion, carrot, celery, spices and dash of worchestershire simmered in water for an hr or two. Strain, thicken with a roux and simmer to the desired thickness.
