You have to dowel the middle tier as well so thy top tier can be well supported in structure. You don’t need to dowel the top tier cos its not holding up any more weight

At least 7 kg of icing fondant depending on how thick u cover your cakes and the details that u will use on the body As for flour dat would be based solely on your recipe for the cake
