Yes like you said it, until is ready and cooked. There is no time for all sizes and fishes.

Hi, just wanted to know how long did you cook the fish for as I have a 8 person dinner party coming up and want this as one of the mains meals. I do a 5 course dinner and would want this one to be he highlighted one. Also i cannot get garlic leave until say 8 weeks so looking at using spinach leaves.

To be honest I am not sure about the time I did. It can be really depend on the thickness of the fish, the quality of your steamer, and the temp of the fish when you start. Somewhere between 4-8 min, I would say. The best to find out is to try it probably and then adjust

Sam, we do have wild garlic in Canada. It grows in the forest. Besides the leaves, the bulbs are great pickled. :-)

@@duncanjames914 Yes, I dug around a bit and found what it was. In French, it's called "ail des bois". Unfortunately it is a protected species in Quebec and it cannot be picked up in the forest. Sometimes we can find ail des bois in grocery stores but at very prohibitive price and it's only the bulb, not the leaves. 😞

Better end colour and body when u cool it down, blanching quite literally means that to cook hot and then cold quickly

Do Michelin starred chefs not use any carbohydrates in their dishes? All your recipes look lovely, but there never seems to be anything other than protein and vegetables. I don't want huge mounds of potatoes or pasta, but I feel there's always something missing. Maybe it's just me. x

Yes is just you, you no need carbohydrates at all. The point of fine dining is to enjoy and try new kinds of food not to get full. You eat rice or potato every day at home, why would you wanna eat it in expensive restaurant again. But if you really need it, just put a few potatoes there, I don't see the problem. You are not supposed to copy my recipes and do the same but get inspired and make something similar.

All vegetables are carbohydrates. Some are considered simple carbs (e.g potatoes, rice flour etc) while others are considered complex carbs (e.g cauliflower, green veg etc).

@@ChefMajk it's true , you always say that don't copy recipe it's just to inspired. There is plenty ways to plating , different way to do it. Chefmajk it's showing his way and I appreciate it because I can take some ideas from him. I worked in michelline restaurant kitchen doing this kind of dishes,still doing without michelline start,you can do anywhere nice food guys, some people complaining for everything, there is nothing missing for this dish. Majk it's really good chef. Everyone keep learning something new always !
