Granny said to put the skin of the garlic in for what purpose? Looks great! Whats the difference between using fish sauce instead of oyster sauce?

Do you cut off or pinch off the root tails from the bean sprouts before cooking? I've been told that this is the practice in some parts of Asia. I have done it twice now, and it is VERY time consuming! However, it does improve the flavour of the stir-fry.
