How to Dehydrate Fiddleheads:
Brush off as much of the brown sheath covering from the ferns as you can.
Keeping the coiled croziers whole, place them into a large pot of water. Bring a pot of lightly salted water to a boil, then let boil 1 minute. Turn off the heat and quickly strain the fiddleheads through a large colander. Let them cool naturally as they drain. Once cool, place them on a towel for 10 minutes for further drying.
Dehydrate the fiddleheads on high for 24-48 hours or until completely bone dry. Then store in an air tight container such as a mason jar in a cool dry place. They will last an easy one year. Be absolutely sure that they’re completely dry before storing otherwise they will spoil.
To rehydrate and cook the ferns, soak them in cold water for a few hours until soft, then prepare them in your favourite recipe.

Found my first fiddleheads today. So I sit here eating some fried in butter with ramps and a small pheasants back mushroom while I watch this video😊.

I usually just blanche, vacuum seal, then freeze. I'll have to try flash freezing first. I have a brook running through my backyard where I pick them. They grow along the banks for about a 100 yard stretch. They're just starting to sprout here in the Adirondacks (mid-April). I just picked a couple cups for dinner tonight. Sauteed with mushrooms and zucchini to go with a strip steak and baked potato. I'll be picking more every day for the next couple weeks.

l was just going to comment about using vacuum sealer for frozen fiddleheads until l stumbled about your comment. boy they will be great with scrimp scampie with angel hair pasta

Hi, that's so very interesting! I never even heard of fiddleheads till just days ago. Your video was so well demonstrated I'm sure I'll remember...now if I can just find me some! They look yummy. TYFS

Interesting. I gave up on freezing fiddleheads, but I'll try this. What is the disadvantage of having. Some air in the bag?

A tiny bit is ok (in my experiences) - - a downfall could be freezer burn if there is too much air.

Blanching slows or stops the enzyme action which can cause loss of flavor, color and texture. I haven't experienced the loss of flavor by doing this - sometimes color and texture, yes.
