I always thought that vinegar and baking soda “neutralized” each other, which would have made this a waste of both. Fascinating!

@BlueGorillaInTheMist
@BlueGorillaInTheMist 4 жыл бұрын
@@jerryjamesstone Can you expand on this? It seems to me either the baking soda or the vinegar will be immediately neutralized upon mixing, leaving only a smaller amount of one of them active in the solution.
@markoap91
@markoap91 2 жыл бұрын
@@BlueGorillaInTheMist You are exactly right. A little chemistry lesson here: Baking soda (Sodium bicarbonate) and vinegar (Acetic acid) will immediately react chemically and neutralize each other, because vinegar is acidic and baking soda is basic. The resulting chemicals of this chemical reaction will be: carbon dioxide in gaseous form (Which is what causes all that bubbling when you mix the two chemicals), water and Sodium acetate. Carbon dioxide will leave the bowl as a gas so we can ignore it, but what will be left in the bowl are: 1. Water - The one you put in at the start, the water that the vinegar was diluted with (since vinegar is not 100% concentrated acetic acid but a mixture of that and water), and the newly, chemically, created water that resulted from the reaction itself. 2. Baking soda OR vinegar (But never both) - Whichever you put in excess, if you got very close to balancing them exactly, both of them will be present only in trace amounts. If you didn't balance them exactly one will be present and the other one will not be present in any meaningful capacity, it still might be present in trace amounts as when the concentration drops the reaction slows down so there might be some still left in there, as it didn't have enough time to react without heating and mixing, but probably not enough to have any effect. So generally you will only have one of the two left but in a much smaller concentration than you originally had. 3. Sodium acetate in solution - Which is a sodium salt of acetic acid much like sodium chloride (Your basic table salt) is a result of a neutralizing reaction between hydrochloric acid (An acid, obviously) and sodium hydroxide (A base). Now, although a salt, sodium acetate does NOT chemically behave like table salt. It can be toxic in high amounts but in small amounts it is used as a food additive or even preservative so it could actually help here, although I don't know how exactly does it preserve food so I don't know if it would help in this particular instance. I don't know all that much about its properties so I can copy the relevant part from Wiki: "[Sodium acetate in] Food Sodium acetate may be added to food as a seasoning, sometimes in the form of sodium diacetate, a one-to-one complex of sodium acetate and acetic acid, given the E-number E262. It is often used to give potato chips a salt and vinegar flavour, and may be used as a substitute for vinegar itself on potato chips as it doesn’t add moisture to the final product. Sodium acetate (anhydrous) is widely used as a shelf-life extending agent, pH control agent It is safe to eat at low concentration."

@@markoap91 Great explanation! I was wondering if the process would be better if you did them each separately like making a water and baking soda solution washing it that to help pesticides, rinsing them well, then soaking them in a vinegar and water solution to remove mold, then pat them dry and store them in a glass container with a piece paper towel at the bottom for any extra moisture.
@markoap91
@markoap91 2 жыл бұрын
@@micahjohnson9184 not really an expert in preserving food, just decent in chemistry, but I believe that doing them seperately like you described would be better. At least you won't neutralize the chemicals so they can do their job.

I finally checked them when I woke two hours ago today and I was so shocked to find out that they were still good and had not gone bad. Fruits and vegetables are perishable and do not last that long. Hi Jerry, I am a bit confused. Why do you mix the vinegar and the baking soda? I think it seems quite misleading... When you combine baking soda and vinegar, you mix an acid (vinegar) and a base (baking soda) which creates salty water and carbon dioxide gas. Essentially, wouldn't you be neutralizing the very thing you trying to use to kill the mold and dissolve the pesticides? I'd be curious to see the storage time if you did a soak in the vinegar, then a baking soda bath afterwards. I would be guessing that it would last much longer than your current process. Have you ever tried this before? Great ideas with common household goods! I will do this.

Shouldn't you wash with vinegar water and then baking soda water separately? Does mixing them together at the same time not neutralize the properties of each that you are trying to capitalize on?

I've read that strawberries should not be soaked - a quick rinse - since they will absorb the water which makes them mushy. Have you experienced water logged strawberries that become mushy? Thanks!
@jerryjamesstone
@jerryjamesstone 2 жыл бұрын
That’s not true, berries are mostly water he would have to soak them for a long time for that to be an issue

Would I be able to use this method for making Chocolate covered strawberries? I saw in other comments when asked should they be rinsed afterwards, you replied not to, just to wash before eating. Should I then wash again and then dry before dipping?
@jerryjamesstone

I have a ? for you. If you didn't have salad spinner. Could you the strawberries on a tea towel or paper towel to air dry? & would you let them completely dry? I'm assuming they wouldn't be completely dry from salad spinner. also not sure if I missed it but can this be done for all fruit & veggies ? Thank You from Medicine Hat, Alberta Canada
