I usually start my game and change standard to nothing for supplies. You get the families, an ox and two timber, no money. I check for underground water and fertility, most maps has very good patch of emmerer.

@hownekin3755 If you start with no money, you need the manor to collect money via taxes and then open a trade route. Usually I get crappy emmerer. I can build 1farm but fertility is rather low.
