Mixing foods reduces the incidence of diarrhea when you switch foods. But there's another way for those of us who are lazier. I change foods the way described in this video. It's pretty simple. You just turn the NEW diet into numerous snacks and don't load the gut with the new food. When normal poops emerge 24 hours later, and stay normal another 12 hours, then the dog is tolerating the new diet and the switch is done.
