Seems to me that you were quite a long time with that first person, the trumpet player. I think you should limit your personal intrusion to only 30 seconds . As long as you took, you definitely should leave a nice tip in their cap or bucket. Especially when you give directions to your subject.

Rule of thumb when doing street work, learn to speak at least some of the language of where you're going.

When taking photos of strangers what can you do as some people might take offence to this and have you had any bad experience when you this kind of photography

It is rare when someone confronts you for taking their photo. But it can happen. In those cases, the best thing to do is to talk to them nicely and show them the photo you just took. Explain why you found them interesting. If they ask you to delete the photo, simply do that and move on.
