After filleting them, put all fillets in a 4oz salt per gallon water mixture for 30 min. Then rinse and brine. Takes away all slime from skin. :) great video

The only thing I would change is replacing the table salt with coarse kosher salt or your smoked salmon will be way too salty!

My Uncle commercial fished Kokanee in Idaho he never filleted them. The skin and bones come off very easy he canned them as well. That was in the 50s and 60s in north Idaho. I sure loved those things. He used an old fridge and would. Smoked over 100 at a time. I was thinking to see where they may be close to where I live now.

Curious if you ever cut pin bones out as part of filleting process? Pulling pin bones one by one is an arduous task, and a time sucker. But cutting Pin bones out removes a very thin slice of meat, is time effective and makes for a COMPLETELY boneless fillet. When I smoke fish pin bones are soft and a real annoyance to pick out a piece of fish being eaten.

That is exactly how I do mine, I even use the same tub to cure them in lol.. about 30 minutes before I take them out of the smoker i put some real maple syrup on them.

try brushing a little honey before you add cracked pepper it keeps the pepper on better and gives its a great sheen!!

I use this one also works great. My real comment is. When smoking the whole Kokanee SKIN ON is it as good filets? I'm am going to try to dip my single frozen fish in boiling water real fast just to get the skin off. Then I will dry brine it.. Wish me luck.

Tried smoking Kokanee once but I couldn’t keep it lit
