Well, we served during the night and used chafing dishes and we really didn't have a problem. Besides using those fly "stay-away" things from like Home Depot, you can assign a person to serve that way they can keep an eye out for flies and not let them land.

Now that's a PARTY!!!!!! I loved how everything was done right and in order... I don't like going to party and guest are arriving and you just now putting the meat on the pit/grill!!! WTH!!! LOL But everything looked nice and can't wait to see the recipes featured from this party!!!

Depending on the meat and the time allowed, slightly under cook your meat, properly cool it, refrigerate it. When you reheat it, reheat it with a cover like aluminum foil and allow it to finish cooking until totally done. Otherwise, reheat food with a cover that way you can look in moisture and monitor the temperature to avoid drying it out.

Thats how I clean my chicken too Caroline!!!! not many do. I can't wait to try that chicken with root beer marinade. I MUST get some Grand Diamond real soon.

GDS has 150mg per 1/4 teaspoon and is in the category of "lower sodium" but not "low sodium", if that makes any sense. Most things considered to be "low sodium" are 140mg or less. It's lower than most of the All Purpose seasonings out there and we used kosher salt to keep from having to use as much.

That was a restaurant supply store where restaurants and people who have businesses shop. If you have a Business Costco near you it will also do the trick.

Yes, Costco is one of them. Costco has a "Costco Business" store also. Costco, Sam's Club, etc will do the trick. The point is to buy wholesale so you can save money buying in bulk.

Try it out. Not sure about the salt content but do it on a small batch of chicken as a test.

Thankyou heaps. In Australia we usually have a cold christmas dinner but this year its a BBQ and I am the only one cooking this year. Only about 20people but still its going to be a big job for me! Thanks :)

You can also use large igloo ice chests, place ice in the bottom about 6 to 8 inches deep, put the meat bags in, and put more ice on top if you don't have 2 refrigerators. Once the ice melts just replace it if you're doing this a day or so in advance.

I never thought of pre cooking the chicken. How long does it take to heat it in the oven? I'm going to have to try this next time! my brother always like chicken but I'm over here like ugh it takes so long lol
