Brother James sent me over. When I watched an old video of him smoking a brisket in a kettle with no thermometer or anything (and it coming out perfect), I knew he was the real deal! If you taught him stuff, then I gotta sub and learn as well!

Well, I expected more out of you. That is, fielding constructive criticism without becoming defensive. If you are doing a technique video, details matter. Also, if you have the comment section open, you should expect comments that may not always be flattering or agree 100% with what you are doing. You have the choice of telling me to go away, or to deal with my comment within the framework of criticism.

I realize you're trying to make a brisket that is probably like for a competition or something, but I personally can't bring myself to trim out any of the meaty portions. Sure, that hard lard like fat has to be tossed, but what did you say that you do with your trimmings? Do you make them into hamburger or something? Or do you just toss those sections that are trimmed but have good meat on them?

I usually clean up the good trimmings. I have a grinder so I do burgers, meatloaf, Tacos and other things with them. Too expensive to toss.
