Like so many others have already said, just when you thought you have seen all the trimming videos you hit us with this. That is the true great thing about BBQ, no right or wrong way. I have been using that knife for years and never thought of trimming the brisket with it. This will definitely be added to my archive of BBQ videos. Where this video stands out is how you trimmed multiple briskets and with speed and efficiency. Thanks for the great video.. Look forward to more..

Man thank you for posting this , trimming has been one thing I needed the most work on, in a decent job trimming, but I love how you simplified the trimming process versus how I've been doing it this whole time. It's definitely going to help me for my 2nd pop-up this weekend.

Jirby has been my absolute favorite person to watch how to trim a brisket for a while. But dude! This video is awesome. Very informative and good tips on shaping the brisket. That thing looked damn good after you trimmed it!

I also love the no filler aspect, but showing the time lapse of multiple briskets is really handy. Always easy to spend 20 minutes doing one brisket on camera, but each brisket has some minor variations, you get one that is smaller or larger, a little different shape in the butchering process, etc., and it's more difficult to implement the same exact technique for different briskets. Seeing you do 5 or 6 briskets back to back helped solidify the PROCESS you're using to shape and shave things. I really enjoyed this, I don't think I've seen any other video go through trimming 4, 5 or 6 briskets back to back. That was really useful, thanks a lot!

Boss, I am....again, SO so glad you are posting. I echo all before me and say that you are a breath of fresh air in explaining. I gotta know, though, what do you do with all that beef and fat trimmed off? Beef is SO dang expensive here in Korea, so I must maximize cuts. Tallow, sure...but the beef and fat cuts? Ground beef uses?

WOW - so helpful. Especially since you did several of them. Not just one perfect one. Every package you opened - oh I cant wait to see how he does this one! Fantastic. I was really surprised you did not mention how thin part of the flat was. As we home boys go to Costco - lord knows was brisket your going to find - and how to tackle it. But this is very helpful - NOW I am not scared over how thin one part of the flat is - and no longer concerned over the mohawk.

Wow. What a great video. My trim game was weak. Sometimes i didn't even do it at all. I went out & bought a knife after this. Great info, camera angle etc. The doing 5 in rapid succession after the in depth explanation with the different sizes made something daunting seem routine. I usually have to watch a video a few times to feel like " Ive got it". Not this time. Hopefully this style of video trends, & other "How to videos" take a page out of your book. Cheers.

if yall could please show more fire management videos going forward that’d be incredibly helpful. i know on the prime rib you mention a bundle fire, but if you could show the set up of that. and what to do later in the cook to set up your fires again as they burn down (aka removing ash or pushing it to the back?) think if you did that in each of your protein cooks on the backyard pits it would help us out a ton

Subscribed. Love the video. Couple questions I had were answered in the comments regarding sharpening. Workshop Electric is your favorite but you mentioned a service company doing your knives every other week. What are they using? I use a wet stone with different grits obviously but it's a long process on each knife. Looking for a better option. Also, I trim with a 6" Vic boning. I have the 10" slicer also and have toyed with the idea of trying it on a trim. May have to give it a go now with how easy you made it look. Question: how different would your backyard trim look compared to your restaurant trim?

They use an industrial sharpener, what brand I am unsure. We use the workshop to maintain an edge in between services. My trim is same regardless for briskets, I trim what needs to be trimmed for the product to be up the standard I expect

Really we kinda eye ball and if we think it will hold up over the cook then we leave it, probably at least 3/4”-1” minimum to put a number on it but that’s just a guess

I would always trim the same, maybe just look for a smaller brisket if space is tight

I notice the flat seems to be pretty thin. Is there a reason you don’t trim more of it off? It doesn’t seem like the yield would be much or are y’all making chop out of it ?
