There are many ways to truss a chicken. Each has its own practical benefits. This method is easy and effective for when you need to simply roast a chicken. You can stuff it with some aromatics, citrus and herbs if you like. Or, you can simply truss the bird to help it cook evenly. It takes one or two tries before you get it right but after that you'll be a pro!

That triple pass through is called a surgeon's knot (learned it in my surgical rotations in paramedic school) and I would recommend fixing the wings before setting the last knot so you can cinch them down more while the surgeon's knot holds tension

After looking at other videos and deciding that their methods wouldn’t work for me (I need a tightly bound chicken for my George Foreman rotisserie) I found this one to be easy. Good tip with folding the wing tips under as well as suggesting, at the finish, looping the string several times before tightening.
