I always thought of scurvy as a funny pirate disease, but... I was diagnosed with scurvy last Spring. Yes, me, a citizen of a first world country! I felt pretty much normal except wounds took forever to heal and I was exhausted all the time. Happily, a routine blood test caught it, so I was treated and my vitamin C levels are back to above normal, where they should be. Take scurvy seriously! Get your vitamin C!

I'm in Florida, and the rose hips I gathered were deep yellow with a touch of red - like a blush. I thought that must be the ripe stage for these yellow roses, because hips older than these started rotting. I gathered two cups full (once they were trimmed), and since your video showed two cups of water for one cup of hips, I cooked them in four cups of water. Once the hips were thoroughly cooked and cooled, I strained out all of the pulp, but I have almost three cups of fluid left. I'm sure that means I should have not used double the water, because your end product from half the amount of water and rose hips was only half of a cup. My fluid was very watery, so I'm going to try simmering it down until I have a cup of rose hip fluid and see if it doesn't thicken up like yours did when it's cooled. Since I've already cooked the hips and strained them out, I'm not putting them back in as I'm reducing the fluid. I sure hope I'm thinking correctly. If not, please correct me, as there's a whole lot of unkept rose bushes in this group and I'll be going back to harvest more. Thank you!

did you happen to find an answer? mine is like tea but thought maybe it was my altitude-7800feet, as none of my fruits have thickened trying to make jams and syrups maybe it is the rosehips are tiny wild ones hoping cooking with lid off for much longer will help

I think the size of the hips does make a difference and had the same issue using giant Rugosa (aka Japanese or Beach Rose) hips on a recipe that used little wild ones. Next batch was fine after reducing the amount of water. Some people don’t even bother to measure the water, they just cover the hips then strain most of it out after cooking until the fruits are soft enough to pulp. I’ve done it successfully both ways.

I made rosehip syrup from your recipe but it didn't turn out very well, the consistency wasn't quite right it was more like a toffee thickness. I think this honey one will be more successful. Thanks for all you do.

I made the rosehip syrup too and it was very thick too but I used to scoop a spoonful out and add it to black coffee and my family had it in their tea, it was delicious

Hi guys, thanks so much for this. Quick question. Does it keep like honey? (Guessing it depends on now much honey you use in it) but just wanted to know of you have to store it in any particular way if its predominantly rose hip? Thank you.

Thanks for watching Joe, yes it does depend on your rosehip/honey ratio. We use about half and half and then pop it in the fridge. It lasts about 4 weeks after it's been opened and kept in the fridge ✌❤

It would take ten of our multiflora rose hips to equal one of yours. I’ve make hip tincture before, but never honey. I did make Hawthorne haw honey based on your video, but again, maybe five of my haws equal the size of one of yours. We have Washington Hawthorns on our property here in West Virginia. I love your book and your videos, keep up the good work! Edit: Sorry, it was elderberry honey, not hawthorn…oops! I also made Hawthorne tincture.

When making rosehip syrup and/or honey there is a lot of seeds left over. Do you have any ideas on using the seeds as they are supposed to also have a lot of health benefits. There isnt really any info on processing them online. Thanks for reading 🌹😊

I wonder about this, too. I recently saw a recipe for herbal honey using 1 tablespoon powdered herb to 1/4 cup raw honey. It didn't say how long to let it sit, but I would guess at least 4 weeks, especially if the plant material is really tough. Dried rose hips look super hard, but I don't know if they're considered tough like roots or bark would be. But they're not delicate like leaves or flowers. I think I'm going to try this using powdered, dried rose hips and honey and see how it works. It would make a nice vitamin C boost to water and tea, or right off the spoon. If I tolerate it well, I may increase the powder a bit for even more vitamin C. Wish me luck! :)

Have you tried, or do you know of anyone making these with dates, rather than honey, for sweetener? I've wanted to try making a rosehip anything, without using honey or processed sugars. If I get brave enough to risk ruining stuff, I will just give it a shot.

We make sugar free cordials using natural sweeteners. These thicker recipes don't really work with most sweetners from our experience they crystalise

It reduces but dosnt remove it. A test was done on the ww2 rosehip syrup recipe which cooks for longer & it was found to still be very rich in vitamin C 🙂
