TLDR: He tells them to think about the password while pretending to put the password in in the air so whenever he gets close the react giving him a clue and a better chance at guessing The way I believe he does it is by pretending to put in the code first in the air like that while telling them to think about the code so every time he gets close to matching the password in the air the person will give a tell or a very faint facial expression because of the anxiety they feel of having their password known basically giving him indirect hints as he's guessing
