As you rightly pointed out it is not countable. However "he chose to live with limited pleasures" is correct. In that place "pleasures" is appropriates. "Pleasures" in this place means a host of amenities, comforts, facilities, nice things etc. We say "it's pleasure meeting you" In reply we say "The pleasure is mine" . here the word "pleasure" is correct; not "pleasures"
