It's really hard to use the mask to cut through the middle of the text. Is there any easy way to do that?

You're right! It's hard especially when your mobile screen is quite small. 😊 I think the easiest way to cut something in middle is the cover, merge and erase color trick. I've Pixellab videos you can check it out to get more idea. Thank you!
