Payapa salad is the equivalent of American chili. Everyone has their own iteration of what it should contain. Each culture has their style then each house has their own variations of it. Always unique when trying it. For work I've host the chili cook off/Payapa salad. It's always fun and interesting to see what everyone brings.

So no garlic either? I've been doing thai style but my sister likes the traditional khmer style so I'm trying to learn it but I feel like garlic really enhances the flavor so I didn't know khmer doesn't use it.

Yep, your papaya salad is definitely Thai or Lao. Cambodian don’t use shrimp fish.

Who made you the Cambodian expert? 😂shrimp paste is used in Chinese, Vietnamese, Thai, Lao, Cambodian, Malaysian, Filipino, Indonesian cooking 🤦♂️ also papaya salad hailed from Laos, so thai papaya salad was derived from Lao cuisine, they are not the original. The original can only be one or the other, not both
