So I’m heading to Sedona, Arizona this weekend. I put the red pin where I want to stand and black pin on Cathedral Rock. It’s a difference of 7.75 degrees. I’m not seeing the dotted white line so does this mean I will be able to see the Milky Way

Exactly, man! The more you know how to use it the more you can't live without it as a Photographer. What if your trying to take a picture of the moon over a building how would I know when the moon going be exactly over the building I want ? Since the pin to pin won’t work on building as you say

why don't you try the APP called planit, it has a built-in virtual camera, it will automatically display the terrain, so that you do not need to calculate whether it will block.
