Such excellent information, Rebecca! Thank you so much! One thing Rebecca didn't mention (and as an admin of IndriVanilla, I thought I'd just point out)--IndriVanilla has one group order running at a time. It will be for a single variety of vanilla bean, and each individual variety can vary in price, size, and flavor. If the variety open for purchase isn't your cup of tea, wait a week or two and there will be something new. That same resources page where you can find the open order form also has a group status spreadsheet that will list upcoming preorders, and it also has an email notifications sign-up if you want to get an email when we open a new order form (and no other emails... we hate spam too). Just a few thoughts! But really, Rebecca's 100% spot-on!

They do suggest that you don’t freeze them, but I have never had any issues with the beans I’ve ordered in the winter months. I’m glad that you enjoyed the video! I had fun making it!

I used a Mason jar for my vanilla and vodka. Jar, lids and metal ring were new. The inside lid(white portion) has several corroded spots. The alcohol must have come in contact with the lid. Is the extract still good? Thank you for this video. I love your explanations and demonstrations.

Thank you! I think you will have to use your best judgment on that. I have heard that a lot of people who use mason jars line the lid with a little parchment paper. Maybe something to think about moving forward.

Hi Rebecca, thanks for this great video! I'm completely new to the topic of vanilla, came across some vanilla videos and became fascinated so I ordered some Madagascan and Tahitian vanilla beans and just got them yesterday. I plan on making a double-fold vanilla extract with the beans but I'm still torn between leaving them whole and splitting them. I spent a few hours researching online and based on what I found, virtually everyone prefers splitting the beans for better (and faster) vanilla extract. I've only found a few people who prefer leaving them whole. Apart from the benefits of reusing the whole beans for vanilla sugar/paste, does vanilla extract made with whole beans really taste better than vanilla extract made with split beans? VanillaPura says on its website that "Vanilla extract makers will tell you that there is a richer vanilla taste when the vanillin is extracted by seeping through an uncut vanilla pod." I'm quite puzzled by this since splitting the beans would create more surface area and release the caviar into the extract which seems like it would release more of that vanilla flavour. Have you made and compared vanilla extracts made with whole and split beans and did you notice a difference in flavour? What do you recommend? Sorry for the long post! I just don't want to waste my beans
@Rebecca.Robbins
@Rebecca.Robbins Жыл бұрын
Thanks for your comment! I have made extract both ways and I haven't noticed a difference other than the process being faster with cut beans. No harm in experimenting though. Why not to it both ways? personally, I always split now, though I do have lots in my mother jar that are whole, so if i ever want a little caviar, I have it. Good luck and happy vanilla making!!!

@@Rebecca.Robbins Thank you so much! So as long as I leave the whole beans in the vodka for at least 1-2 years, the finished extract will be as good as extract made with cut beans right? And I'll still be able to reuse the beans for caviar

First timer here…I will be out of town when my beans deliver. Will they be ok? Should I tell my husband to do something with them until I get back??
@Rebecca.Robbins

Depends on how long you will be away for. It’s my understanding that the beans should be covered in Alcohol as soon as possible. Because I’m Canadian, my beans always come vacuum sealed so they are okay for several days, but if yours come in a ziplock, maybe he could just add a touch of alcohol to the bag, or put them in a long Tupperware and cover them with alcohol in there. Just do not put them in the fridge or freezer.

Do the beans have to be extracted after one year?
@Rebecca.Robbins
@Rebecca.Robbins Жыл бұрын
I’m not 100% sure what you are asking! If you are asking if they are for sure extracted after a year, the answer is no. Depending on a number of factors, it can take longer than a year.

I had never bought a vanilla bean in my 64 years until August, 2024. My first order was 2 ounces. 2nd order was four ounces. 3rd order was 8 ounces. 4th order was 16 ounces. 5th order was back down to 8 ounces. Yeah, I got it. Got it bad.

Do you know that each type of vanilla has a different taste? You’re mixing everything in one mother jar, you’ll lose all those different nuances.

The beautiful thing about a mother jar is that you will end up with a very complex robust flavor! The mixing is intentional!
