I learned on the coop, that the pods are where most the flavor flavor lives(oils). Cutting them exposes more surface area for extracting. The seeds are used for the 'oh! Look!' Factor and don't have strong flavor.

I'm so glad to know this! I've been wondering, because I read this interesting thread on cutting the tips off and adding all of them to smaller amounts of liquor! I wondered if this would really work if they don't have the paste!

Well, Miss Darcy, I had never every thought of dehydrating the beans after making the vanilla....thanks for the video! Not a speck of the vanilla bean will go to waste now. I had a bottle of spiced rum siiting in the party cupboard for too long so I started that bottle up in July. :)

I started my vanilla in July with other extracts. I did some Madagascar and some Tahitian with vodka and rum. Love it!!!! Also did mint, almond, orange, chocolate with cacao nibs, and cinnamon. Also made some amaretto and Kalhua for gifts as well lol

Great video -- I've been doing this for years. I use either Smirnoff or Pinnacle, which ever is cheaper by "the handle". All my neighbors know they can come to my house when they run out of vanilla, lol.

Thanks for the info. You can put mullen flowers in vodka like this and make cough syrup too. Mullen is a wild plant.

Thank you for these tips Darcy! I made vanilla for the first time this year. I'm giving them as gifts to our adult children, a friend and one for me. I wish I would've made vanilla sooner!😊

I've been making vanilla for years. I keep all 3 flavors on the shelf-- tequila, vodka and bourbon. Use them for different things. I just may try a rum one next. Tfs ♡

never bought alchohol so I wouldn't know where to start. However, I lived in Mexico for a year when I was out of college and back then we could get a huge bottle for $1. Might have to look into this.

Definitely going to try this, I have a bottle of vodka that was gifted but I don't drink. I was told it's top shelf. Do you think I could use it? Also I can't find the links in the post. I enjoy your channel. Thanks!

Sure - it's just using top shelf is an investment that isn't necessary - which is why I suggested a mid grade. The links are in the description box ;)

Thanks for this video Darcy... last November (2020) I started two bottles of vanilla for the first time.... back then I had read to allow them to sit from 18-24 months!! I ran out of vanilla earlier this year and decided to dip into it.....smells nice and is delicious....figure it will just keep getting better from here on out. When you refill your bottles do you wait until you have emptied it or do you top off the bottle to keep the beans covered? Oh and I'll remember to dehydrate and powder the beans/pods when done with them....great tip!

That is what I suggested. Put a date when it will be ready and give it anyway.

I don't. I fill my daily use bottle and then when this one is down far enough, just refill it and make more. You can always do it in smaller containers than what I did so that you never have to worry about running out of the base.

This may be a silly question, but what if I used a vanilla flavored vodka to make it? Would that do anything different? Could that potentially speed up the process?

I doubt it. Just because the alcohol is flavored doesn't mean it isn't going to taste like alcohol a lot - and the melding of the vanilla oil + alcohol is what takes time. But give it a try - it might work and might taste great.

No - it takes longer - it will depend on how many beans you use, etc. But giving it now with a tag that says 'when it will be ready' is a good start. Some say a year, I've never needed to wait quite that long - but it will just depend on your blend. It's to get to it not tasting like alcohol but vanilla.

Usually 1 pod per 1 C of alcohol. I tend to use more because it's what I like.

I have a bottle about as big as that vodka bottle going for about 14 months now! I splurged on a large blue bottle with that porcelain capped lid, that has engraving etched in one side for my Christmas present to myself last year! I am giving several of 4 oz blue apothecary bottles that should be ready by Thanksgiving to give as Christmas gifts to all of my Sisters in Laws! Along with Coconut Extract and Lemon extract for them as well! And a pint container with Vanilla Sugar with two cut vanilla beans in them. You may have told this already, but how would I go about making vanilla powder? Would I need to dehydrate the vanilla bean, then condition then grind the whole bean? And would using brand new unused silica packets in my tomato and vegetable powders help to keep them dry? Someone told me that but I wanted to ask my Dehydration Specialist (You!!!)🥰 before I did that! Wanted to make sure that this would be a good idea and utterly and completely food safe! Thanks So much for your time and sharing your knowledge! You're helping right the wrongs if watching one too many homesteaders that seemingly know all the right ways and are the right and only person to come to for advice! 🤷🏼‍♀️🤦🏼‍♀️ Thank You Again for Sharing the Right and Safe ways to properly dehydrate foods! 🥰 You are Awesome!

1 ounce of bean to 1 cup of 80 proof alcohol for single fold. 2 ounces of beans for double fold(strength) to 1 cup of 80 proof alcohol.

Someone told me you can speed up the process buy using an instant pot. I haven’t tried it myself yet.

Great Information Darcy……….if I win the lottery I’ll do this. 🥴😁 Vanilla beans (pods) here in Australia are $5 each (direct from the grower)………. So to use as many as you did plus buy the vodka (that size bottle would be $50+) it would be a very expensive exercise. Guess I’m going to have to move to the US….🤣😂🤣

You can always do it in smaller quantities. I am making the rest of that bottle for Christmas gifts (and splitting up some of the beans in the two smaller bottles I did in the video as examples. Of course, if it's less expensive to buy real vanilla extract - then yeah, that makes sense, too!
