I was just looking at getting into this recently, since I have been making some small batches, and today was thinking I might have to get a canner... no idea I can't even use them on my stove! I'm canning for the first time. Do these methods work for vegetables, stews, etc?
@jaimielistens5 ай бұрын
@@ChristineSorrento No, vegetables stews and meats need to be pressure canned. For that you will need a pressure canner. If it's your first time canning, I recommend reading a canning book to understand the underlying food safety and procedures.

I’m new to canning. Is this video simply to sterilize jars before putting jam in or is this video about boiling AFTER jelly is in the jars?
@jaimielistens2 жыл бұрын
You can sterilize your jars in the pot, and you can water bath can in any pot that you can fit your jars in, as long as there's room for 1-2 inches of water to cover them while canning. So, yes, you can use the pot to boil the jars after you fill them with jelly.

I always recommend following the latest health authority guidelines and approved canning recipes, like the latest Ball Blue Book. The time varies by recipe, but for jams and preserves in half-pint jars most recipes are 10-15 minutes plus adjusting for your particular elevation.

Sorry, but am I missing the actually procedure for sealing them? How is it that you seal them without the water bath? I am only seeing the procedure for sterilizing and preparing the jars
@jaimielistens Жыл бұрын
They do get a water bath to seal them. It's the same process as usual, it's just the instructions for making sure your jars fit a smaller pot with the required 1" water above the jars without having water overflow everywhere.

I came here just to learn how to can without water bathing. It didn't say anything about the prep before even starting to make jam but that's all this video was about. Not saying it's not good information but the title is very misleading.
@jaimielistens Жыл бұрын
The title isn't misleading if you are showing people how to water bath can when they don't have access to a water bath canner. The first part of the title specifically states "How to Water Bath Can" it doesn't say canning without water bathing. I'm sorry you misunderstood the title.

@j7ndominica0515 ай бұрын
Why does a dedicated water bath canner even exist if it appears to be a stock pot with an incompatible bottom? For jam you don't even need to use a water bath. Fill hot (maintain heat under the jam) one jar at a time, close with clean lids tightly and leave to cool. Sterilize the funnel. Do not clean the rims with a cloth, but rely on the liquids funnel to keep them clean. In Europe nobody used to bring jam to a boil again inside jars. They may do it now because of new school videos. I experienced the fruit mass boiling over and making a mess, which also cemented the TO lid in storage. The jars rattle from steam bubbles under them. Bringing a pot of water to a boil and even boiling vigorously as opposed to maintaining 100° uses too much gas. The process can be optimized to save time and money. Where the water bath comes into play is if you have some vegetables that are packed cold and only covered with a hot marinade.
@jaimielistens5 ай бұрын
@@j7ndominica051 It's FDA recommended in the US, even though there are other ways to get the job done. I guess it's an extra safety precaution because they care so much about us. Personally, I prefer my grandma's no-cook freezer jam recipe.
