Thank you for sharing this method. Another important part of this method is that the eggs should be 24hrs or less old. So really fresh is key as well. My longest storeage was 18 months. At a little more than 18 months, I had bottom eggs fail in a 1/2 gallon jar. After some research, I found that the hydrated lime does indeed soften egg shells over time. Still a fantastic way to store eggs! Just started another jar last night!

Yes, everything you added is right on! The hydrated line will break down the shell a little bit over time so definitely handle with care :-)

Could you place a tray of some sort at the bottom of the jar to keep the eggs elevated off of the lime that collects at the bottom?

I'm definitely doing this!!! We don't have very many chickens now but still I have more eggs than we can manage to consume. We also have a young man in our church family who sells eggs to us and I do like to support his business. I have just the jar, too - one I used to make my Kombucha in :).

Good job on explaining the process. Was very glad to hear you mention about candling them...it is one step that is often forgotten, but is crucial. One bad egg in the batch can ruin the whole batch.

We've been water glassing eggs for 10 years. Last yr we did 2 5gallon buckets and 1 6 gallon(total of 3 buckets for family of 7) we are still going thru our last bucket and was the 1st time I didn't have to purchase eggs for a whole year! Also, water glassing eggs is using sodium silicate which is used in a concrete sealer called water glass even has a recipe for preserving water glass eggs on jug you can get at lehmans. Lime solution is different but same method 😉

Wow....so you did 5 gallon buckets. Did the weight of the upper eggs not crack the lower eggs OR did you use something to separate or ‘lift’ each layer of eggs? Just learning about this - so thankful for any help. 🙏❤️🐣

@@gusrouff nope I didn't use anything. I put my buckets on my pantry floor and DO NOT MOVE THEM until my eggs are gone to clean bucket. Eggs crack when your moving them around☺ when I need an egg I lift lid and get it out, I don't carry my eggs around!

Be sure to keep the eggs completely covered by the lime solution bc some evaporation will occur over time. Store the container in a cool, dark place or keep the container well covered away from light. Susan

Thank you so much for this vivideo! We have 5 hens who are getting older and their production is definitely slowing. I absolutely hate buying eggs from the store. We got 11 chicks this spring, so I plan to try water glassing once they get going on laying and we have an excess again. Pretty sure at least half of the new chicks are roos. Hoping to try hatching some eggs from this new group too!

Good Sunday Mornin' Everyone!!!!! Got taters in the bucket. Ask any farmer. With all the TV commercials showing people with their freshly laundered clothing shoved in their faces inhaling them as if fresh fabric were some kind of intoxicant, and dancing around their washers and dryers, we've lost sight of the importance of the soil. My favorite method of maintaining a sustainable pantry and stockpiling items long term for the whole family and the family dog and the family cat is what I consider to be the most practical, utilizing every type of food storage methods and technology available, both old and new. . Except for the fruits and vegetables that get canned, I keep perishable items like meat, poultry, fish, fruit, vegetables and dairy products in the refrigerator on a short term basis until I'm ready to use them for a big family meal - and for even longer term sustainable storage, a large separate freezer, which can store a half side of beef with plenty of room left over for homemade ice cream etc. . I'm considering upgrading to a walk-in freezer at some point.in the near future, if my plans to open a bed and breakfast come to fruition. Sometimes, however a nice round of cheese can do well for quite awhile on a pantry shelf at room temperature - and doesn't mind even if it has to stand there alone.😁 Store bought canned goods get shelves.in the large pantry closet - several for canned meat like corned beef hash, spam and sandwich spread and another for canned vegetables Bread, rolls, grains, homemade pasta, cereals and the like are stored in special humidity controlled bins I order from Amazon Prime - which usually get delivered to my doorstep about an hour after I order them. . Stuff from the family garden and orchard, like onions, bell peppers, tomatoes, cauliflower, cucumber, pumpkins, carrots, corn celery,, potatoes and yams, cherries, blueberries and strawberries get canned in Mason Jars and stored in the cool, root cellar of this wonderful rambling former farmhouse (circa 1867) I share with my extended blended family and several rambunctious dogs raised on table scraps from the some of the finest food from a plethora of sources both commercial and home based. . There's even a special separate "summer kitchen" which I converted to store butter and ice cream churns, pots, pans, utensils, extra storage containers, foil, bags, cutlery, and other meal related accoutrement. Out back in the woods, just beyond the big pile of wood I maintain all year, (for use in an antique woodstove I keep on hand, in case the power goes out) there's even an old rusting vintage still where my great grandfather made some of the finest corn whiskey for miles. Next to it is the rusting hulk of the Ford Model A he used to transport that powerful hootch by the light of the moon on soft summer nights to his eager customers in a tri-county area. Further into this verdant forest of mostly sycamore, oak, pine and scrub, runs a cool stream into which I occasionally cast a rod or net to catch some Brook Trout, Bluntnose Shiners, or whatever takes the bait (just earthworms for the most part). And yes, hunting season means wild turkey, deer, and even an occasional wild boar. Next week, I'm planning on filing for a permit to 3-D print a smokehouse in order to be able to create gourmet artisan handcrafted, beef, bacon, turkey, and beef stick jerky, which interested local merchants can private label for other people to share with their families and their family dogs. Unfortunately, i had to break the bad news to my free range hens today that due to expected egg shortages regretfully numbered are their days of laying a couple of eggs and then basically taking the rest of the day off with ranging privileges' within the parameters of a few very nice rural acres - parts of which are rich with fat grubworms. There's even a short dirt road between the main barn and the farmhouse which they're free to cross to get to the other side as often as they'd like. My rooster Ben overheard me and he ain't too happy either, knowing full well that due to oncoming egg shortages, he'll be "workin' overtime to make sure there's plenty of eggs for me an the family. 😊

I’m not sure if this was answered or asked when removing eggs to consume how do you recommend removing those from the solution with sanitized tongs and is there anything that you need to be careful of when removing them to not compromise the eggs that you still have in there and are storing?

If the Glas container is filled with too much weight the bottom can crack and break off when slid on a shelf or attempted to be moved any way, too.

Our eggs get lots of muddy footprints on them this time of year!🤪. I find this interesting but I usually dehydrate, but we can get sick of scrambled eggs only so I think I might need to do both! ♥️👍🙏🇺🇸🤓

Good morning!! I knew this video would be coming out eventually. I have a question for you. I started water glassing for the first time back in February. The other day I went into the pantry and saw two cracked eggs halfway down. Not sure how long theyve been cracked for. Long enough for the yolk on the outside to curdle. I know that cracked eggs can ruin the whole batch so I took the eggs all out and removed the two cracked ones. Then i started to remake a new solution. Well, i then realized all the good eggs were out in the open on a towel and were already dry and the solution was evaporated. I figured I ruined the whole batch and was not sure so stayed up and washed ALL 80 something eggs and refrigerated them. In the event that happens again in the future is it safe to re submerge your eggs into a fresh solution if they were allowed to dry out or would you keep them submerged till you have a new solution mixed up? Sorry its so long!!

Hi Angela! I think if that situation would happen to me...I would get a fresh bucket and fill it up with new lime solution. Then I would transfer my old limed eggs into the new solution without letting them sit on the counter and dry out. And then only put the good eggs into the new bucket of lime water and discard the cracked eggs that you discovered. Does that make sense? I probably wouldn't risk putting the eggs that had sat out on the counter and dried back into the lime solution. I would have to research that more and see if that's safe or not because I actually don't know. Hope that all makes sense :-)

Needless to say I have about 80 eggs in my fridge. I better get to batch cooking something. I have and am using the same exact jar from walmart. Please help me out here, I’ve not heard anything good about water glassing eggs but rather that the texture becomes rubbery and the taste changes. Can someone truthfully tell me? I don’t want to invest the time and product if it’s not so good. I know it’s been around for many many years so I know it’s a proven method lol I just wanna know if it’s a tasty method! Always love the videos here and the push to get the info out there 💞

Water glassing is, in my opinion, the best way to maintain the original taste and texture of the farm fresh eggs. Freezing definitely changes the texture of eggs. I have seen other channels do taste testing challenges with eggs that are over one year old and the people can't tell the difference between a fresh egg and a water glassed egg (other than the water glassed eggs yolk breaks after a long time of being stored.)

And just do a small batch if this is a concern for you ❤️ and test it out...trying one egg each month or so! See if you notice a difference.

Do you know, can I use a Ball jar with a ‘sealing’ lid when I screw it on or does it need to allow for air/gases to escape, so not a tight lid??? (Thank you. I was just taking with my friend about how to preserve eggs last night!! Perfect timing!)

We just take out what we want to use and leave the rest in the lime solution. Wash and enjoy:)

If you are going to boil the eggs, rinse them and put a small hole in the large end. You can use a push pin or a small nail. Otherwise since they are so well sealed by the lime, many will crack from pressure while cooking.

Hello! I have a question about the glass jar you are storing it in. To store the eggs, should in clear glass like that do I need to store it in a dark area to keep sunlight out as much as possible or is it ok for a room that does get some light? I’m just trying to figure out where I’m going to store it in my house.

Put away 12 dozen for last winter and didn't lose a single egg. They tasted great! I have a question though. Can u reuse the lime water for more eggs or should u start fresh. My thought is the lime water didn't change so why not reuse it? Has anyone ever tried this? I did use some of it to paint on the henhouse floor as it does make a good wood preservative.

Hi Annie how long can you preserve them for? When you take them out should you rinse them before cooking them if your making hard boil eggs?

Yes, definitely rinse after you remove from the line solution. Some people store up to 2 years this way but we shoot for 1 year.

If you do lose some water due to evaporation over time with that container not being airtight, is it ok to add more solution to the top? It seems you want a good amount over top the eggs correct?

Yes and yes. Keep a lid on and top off with new solution if it evaporates.

I have heard about the water glassing method, but since the time I was little most folks had electricity and could refrigerate them. The extra eggs were often sold to supplement the ladies kitchen/house financial budget. Then store bought eggs got so cheap that farm flocks got smaller, or disappeared. Many of the families I knew when I was a kid either had chickens for a few eggs they used or they bought or hatched chicks primarily for layer replacements and meat.

Not everyone has room in their refrigerator to have an extra 12 dz eggs ... And farm fresh chicken eggs are more popular now than I have seen them in years. I definitely don’t want ANY store bought eggs

Only have 1 question Annie Do the eggs need to be day layed or is maybe 3 day old safe enough to use...I get eggs everyday but only being one person idk if I could add like 3 day old or what.??? Thank you in advance.

So if you do get a cracked or broken egg, do you consider the whole bucket contaminated or just the egg that broke?

Most people consider the whole thing contaminated due to the smell a broken egg creates (if not caught early on). That's why we do smaller containers. But we would feed any ruined eggs to our chickens so it wouldn't be a total loss.

( bird flu fears? I don’t know) anyway… my eggs go back to April 7th… this is May 1st. How old can the eggs be to safely water glass them? Or should I use the current daily fresh ones? Also.. I refrigerate them . Can I take them out of the refrigerator and waterglass them? Or should I only waterglass eggs that have never been refrigerated? I don’t wash my eggs. The ones in the refrigerator are unwashed. Is any glass okay or are some glass containers not suited … in other words… is there food grade glass verses non food grade? Maybe glass is glass…. But I had never thought about it before as I always use glass containers that food was packaged in. Thank you ever so much!!! I love your videos! Getting ready to do my Azure order! Hello! The best answer is to stick with the freshest and best eggs for water glassing. Save and use your older eggs to eat now and use all new fresh, unwashed eggs for water glassing. You can use a wide variety of containers. We would never recommend using old eggs, eggs that are already washed, eggs have been refrigerated,.... Use the newest and best eggs for the greatest success.

They stay soft on the inside. The shells on the outside, over time, get thinner/less strong so handle with care:)

So, I did this and had an egg break in the solution. We just removed it but now I am wondering if that ruined the rest of the eggs in the bucket. Should I dump them? Or next time change the solution? I dont want to get sick eating them.

A basement/root cellar is best. Cooler temps are preferred if you can. But you can store in your pantry too.

Our chickens have really slowed down with laying all of the sudden and I can’t figure out why! We were getting 10 dozen a week and have only been getting a couple a day the last couple weeks. Any ideas?! Their coop is clean, dry, safe, same food, etc. We’ve been giving them extra % protein through mealworms, scrambled eggs, etc to see if that helps, but still no change. We’ve had chickens for about 8 years and I’ve never had this happen. Especially in spring!

Hi, I was wondering if you or anyone could tell me what happened to mines.. I water glassed my eggs for the first time ... just tried to use a few but each one made a very loud POP when I cracked it open (like I screamed cause it was so loud and it startled me lol) do you know why it did that? like Im assuming somethings wrong and its not good to use cause every video I've watched no ones popped like mines did when i opened it.

Help….. I can’t get really clean… unwashed eggs… I’m on my 3rd farmer…. 1st farmer 5 doz… washed them all ended up freezing them…. 2nd farmer 5 doz… one doz pretty clean went to water glass, other 4 doz washed, completely dried and mineral oil rubbed and now in fridge, 3rd farmer 6 doz 3 doz water glassed other 3 doz just washed will probably mineral oil too….. can you water glass eggs that are a little dirty? If an egg “explodes” after awhile in the water glass jar are all the eggs in that jar now bad?

They can last quite a long time! A year or longer is very normal... Some have had success over 2 years!

Help… important question. I accidentally put 4 dirty eggs in my wonderful batch of water-glassed eggs. So having caught it within 1 minute I threw the whole batch out. How do I dispose of the lime water?? So I can start over…. I am seeing it is toxic… some say garden… some say put unscented kitty litter in it till it is absorbed and then throw it away…. As an fyi …. I have a septic tank. Can I bury it in the soil? What do I do with this stuff? 😱😱😱😱😱😱😱 thank you!

I did water glassing my eggs for the first time. I used 1 oz weighed hydrated lime per quart of distilled water. I used a 5 gallon bucket. I used 2 gallons of water. I put almost 9 dozen farm fresh clean eggs. Today, i peeked at my eggs and the color is coming off the eggs. I dont think this is supposed to happen. Can anyone help?

You could remove one and check it out.... It may just be the lime clouding the shell of the egg. It sounds like you did it right ... All the best!

She said she does not have a choice LOL yes she does she can set the eggs on the bottom then when filled start to stand up the eggs and fill in the spaces with a few more eggs as more room is created while standing them up. She made the decision to not do that. You don't have to be lazy or in a hurry just do it RIGHT PEOPLE pointed side DOWN!

The FDA does not recommend water glassing as a safe method for storing eggs. Calcium Hydroxide (slacked lime) is known to contain botulism in the powdered lime itself. Hydrated lime does not protect against botulism in long-term storage without acid and heat to kill it.

I definitely agree with you if it is a possibility for people. But if they are using plastic we highly recommend food grade buckets. I always prefer glass for storage in any scenario!

20 min to tell a 5 min method SMH. 1 qt water 3 level TB pickling lime, unwashed eggs, fresh eggs, pointed side down the best you can into a food grade bucket, container or glass jar. Stores 1 yr or way longer if kept in a cool dark place. Use gloves if you have sensitive skin when touching solution. Some people add the solution first while others add the eggs then the solution. More eggs can be added each day if you dont start off filling the container you are filling. WASH each egg with running water when you plan to use some of them to remove the lime water. Crack each egg one at a time in small dish because some will spoil so be ready for that! Most will be fine.
