One question, what does one do once the pairs are thrown out? Do The thrown out pairs just get cut?

thanks for the comment. If they are thrown out in cloth stitch during the work then yes they are just cut off after the area is clear of pins. If you mean at the end of the piece of lace, at a join then there are various ways of dealing with them.
