Hope you barbecuing is coming along well! The best way is to just start smoking and grilling meat. Ultimately you'll discover your own path, and try it different ways, until it's YOUR BBQ! Pleasing yourself and those who eat it is what's most important. I started about 15 years ago, and early on ruined a few briskets trying to get the temp and timing down (it was still edible, just not perfect). You'll want that pretty smoke ring, amazing aroma, nice bark, and just right pull to make the perfect briskets! Good luck!!

I highly recommend trying, both and seeing which one you like, some people like foil, because it locks in the moisture, some people like paper, because it allows the brisket to breathe. You can’t go wrong with either way. I’ve had amazing briskets using both.

If you don’t wrap it will get too dark. Some like it that way. But I like to wrap to stop the smoke from hitting it. But continue to cook it. Some wrap in foil too. It’s a religious debate that comes down to personal preference

To reduce steam build up. That can make your bark mushy.
