You missed the best zester, a microplane. Its a woodworking tool used to smooth wood and has very very fine holes in it and takes just the barest layer of zest off the lemon, avoiding the pith altogether. Another thing i have always thought would be excellent is (now dont laugh or cringe just yet) a brand new pedi egg! AND it catches the zest too :) lol.

Actually, that thing he called a zester looks like my microplaner, so I'm not sure what you are talking about? And yes, LOL...that pedi egg, which I have btw, looks like it would work! My hubby cringes when I use mine on my heels, LOL....

I use a box grater. It is easy and I just get the yellow peel.

I have a question about my microplaner (sp?) I don't use it very often, and when I need to it's so frustrating because when I zest anything majority of the zest gets caught inside the small holes and I have to smack it very hard on my cutting board to get it out, and it's zests the citrus so small that it is like powder almost and is hard to capture to get the amount. When I zest a whole lemon, I'm lucky to get a full teaspoon! Am I doing something wrong you think, or would freezing the lemon for instance ahead of time improve the quality of the zest? Thank you

+Jennifer Roberts I just learned that you can dry (dehydrate) the peel and then grind the dried peel with coffee grinder or food processor. This of course would require you to do this before you need it. I plan to dehydrate a lot of peels and grind them and then store in jar

I always get so frustrated zesting a lime. Maybe my micro-grater is too blunt, but I take forever to do it and my fingers keep slipping off the lime. I grated my thumb something bad one time. And I find myself leaving large spots unzested all the time, so I have to go back over again. I keep at it though because I don't wanna waste that useful zest.

I have a question. When you cut up the skin and include the white bits with it, say for including in jam, does it loose the name of being 'zest' and is called something else? Would it be called just skin fragments and not zest?

I've personally had two meals ruined by over zesting. The usable portion is barely the surface on a regular lemon. Below that is the bitterest tongue-stragling matter to found in the kitchen. Leave it to pros.
