My grandma used to use the corn cob scraps to make jelly. At Christmas, we would get a random jar with masking tape on the top that would say "rhubarb corn cob" Oh, how I miss her!

As a teenager I would visit my grandma in Georgia in the summers. She taught me how to bake biscuits pies and cakes from scratch. They would save their figs til I arrived and we would make preserves. I call them pig freserves. I miss her too. I have 5 grandkids and I'm trying to give them the grandma that I had. We do crafts and I want to plant gardens with them soon.

There is a little ice cream shop where I live, they make their own ice cream 🤤 that should tell you enough, but they do have a sweet corn ice cream that is to die for! It’s my absolute favorite. I have it every time I go, I’ve never seen it anywhere else. The shop is called Scoop ‘n Buns.

sweet corn ice cream is delicious!! it pairs nicely with coconut or almond milk too (source: i'm lactose intolerant :P)!! for those who want a can't do honey: try simple/corn/maple syrup, agave, dates or molasses instead of honey! people with egg allergies: for every yolk, add the following to the mix: 2 tbsp of cornstarch turmeric if you want to yellow it pinch of black salt for taste (optional) 1 tsp of unsalted fat of your choice (melted margarine, coconut/avocado/canola oil) *simmer lightly and briefly to activate starch first, then let it cool before making ice cream!* I just hope everyone who likes and is able to eat sweet corn would try sweet corn ice cream, regardless of other dietary restrictions :)

One of my favorite warm drinks when i have a sore throat or it's cold outside is just cornmeal or cream of wheat cooked in milk with a pinch of salt, some form of sweetening, and whatever spices i feel like, usually cinnamon and nutmeg but any kind of pie spice would work well. It's thick, creamy, has a really smooth and filling texture when you're not up to eating solid food, and just warms you up from the inside. I'm pretty sure this is a Hispanic thing as well, but it's just what my extremely white mom would make when i was a kid. I also love sprinkling some shredded coconut on top for extra chew.

I’ll have to try this! As a random side note, have you guys ever messed around with growing okra? I imagine y’all are too far north for huge output, but the plants can be so incredibly productive. Last year my dad made the mistake of buying 24 okra plants, because usually a bunch never make it or get mowed down by deer. Nearly everyone of them survived, & the record heatwave led to like 20ish gallons of okra from our home’s garden. We were absolutely drowning in the stuff.

Wow someone else who’s not Filipino is eating corn ice cream. I thought it was just us. But thanks for reminding me. My corn is growing nicely- Allure and Martian jewels. But they’ll taste so amazing I’ll straight up eat them. The local corn from the east end of Long Island is really great, I’ll use that for the ice cream. Been making succotash too with zucchini and tomatoes from the garden.

For even more flavour and further sustainability/less waste, you can also scrape the remaining corn from the cons to release the “corn milk”. I usually do this for any chowders, soups or stew recipes that involve corn, so I don’t see why this wouldn’t work out in this sweet corn ice cream recipe too. I usually use the back of a kitchen knife or butter knife to scrape along the cob that I have previously already cut the kernels off. You can then strain out the larger chunks if you would prefer to, but the “corn milk” would still provide a much more intense flavour.

My Granny used to make corn cob wine. She also made homemade ice cream. It was DELICIOUS! I also met a retired nurse at the farmer's market that was made corn cob jelly. Also DELICIOUS 😋 This video makes me wanna pull out the old fashion ice cream maker. It has a handle to spin the cream😂😂

Couple of tips: Use a bundt pan when cutting kernels. Cob in the center post, kernels fall in the ring. Use the back of a knife to scrape all the corn milk out of the cobs after you cut the kernels off.

Here's a tip to make removing the kernels from the cob easy. Simple put a Bundt cake pan on top of a plate, put the tapered end of the corn at the hole in the middle and push down. All the kernals come off! After a few cobs, dump the kernals from the plate into a bowl, replace Bundt. Repeat process. Easy peasy. ❤

Put a small bowl upside down inside the large bowl. This puts the knife above the edge of the large bowl. Set the corn on it's end on the bottom of the smaller bowl so you can cut the corn kernels off without hitting the edge of bottom bowel with your knife. Your corn kernels will fall into the large bowl keeping it contained. Your Welcome : )

If you didn't have the cob scraps, you can just put a can of cream corn, milk and sugar in a blender and freeze that. Actually, forget sugar. Use condensed milk to boost thickness and milkiness.

Next time if you add too much salt (to anything soupy), peel a potato and cut it into quarters. Put the four pieces into the mix and let it sit for an hour or two, covered, on the lowest lowest heat possible. Pull the potato out and taste your dish. You'll notice it's become remarkably less salty. I grew up in the Midwest and a farmer taught my mom this trick in 1972.
