For those who don't have, can't have, or don't want to use bacon, use butter and a little smoked paprika in the beginning. To approximate the bacon topping at the end, sprinkle some fried sage leaves.

That looks delish. I was raised by an Alabama mama and we always 'scrape the cob and get all that goodness out'. Not sure if I am using the right adj. but we use a butter knife so that nothing hard gets into whatever dish is being cooked. Anyway that looks alot easier by letting the heat do the work!! Thanks

I’ve been making this for years! After taking the cobs out, I scrape them then only mash a few potatoes against the side of the pan. At last, I add a sour cream then the bacon back. We eat it all year round using the corn I scraped off the cob and froze.

saw your video, realized I have (most) all the ingredients...60 mins later I was eating this chowder and it was great! I was able to use the corn my neighbor grew, use the potatoes, onion, garlic, carrots that I grew and I happened to have the rest on hand....I did add a bay leaf and dropped the celery since I did't have any but it was still a very very good chowder. I doubled the pepper and added Sriracha to my cup of chowder before topping with bacon and it was delish.

I just made this corn chowder today and it was a hit!! So yummy and easy to make! I used can corn which is what we had on hand, 2% milk & heavy cream for some richness and to thicken it up, I used a little cornstarch/cold water slurry at the end. This is a keeper recipe! Thank you!!

I make something like this a lot in large batches. I use silicon molds to freeze serving portions. 1 or 2 cups sizes. I then vacuum seal the frozen blocks and put them in the deep freezer. Anytime I want good soup, I toss a bag into the sous vide and it's as if I just made it. Great way to make food.

Excellent chowder however the next time I make it I’ll probably start it with a Rue to thicken it a little bit more and add a couple tablespoons of butter to add some richness to the chowder. I’ll probably add fresh shrimp as well toward the end for additional flavor. Excellent base recipe. Thank you for sharing.

I’m making it now and so wish I had made a roux as mine is very watery. I haven’t puréed any yet so maybe that will make a difference. I am also adding shrimp, and topping it with bacon and crispy mushroom and crispy jalapeños. I used more Cajun seasoning to add heat.

A little hint is to after cutting the corn off the cob to take the back of the knife and scrape the cobs into a bowl to get the juice and inner bits.

I also would suggest, that the soup is made without the milk and simmered or even low boiled until the potatoes are tender. A few Bay Leaves and red Pepper flakes would be good. At that point. You can purée half of the solids with the Milk (remove the Bay leaves). Then add that mixture to the pot and raise the temperature. Then add the bacon (and Cheddar Cheese) and serve. This way you ensure that you won’t boil your milk!

That is the key trait of corn chowder. The chowder part where all the corn is processed. If you are in a hurry, just get cans of creamed corn. I use gold spuds, but I also toss in a few red spuds for Ss and Gs. Mash those up too as they add to the chowder.

I use shred hashbrowns, cream style corn & sweet corn (1 can of each) 1 box of chicken broth, 1/2 cup of half N half, 1 block of fat free cream cheese, 1 prefer shredded carrots. Sometimes diced up mushrooms. I like adding Perdue seasoned carved chicken for my protein. This chef looks tasty 👅
