I use Wusthof knives and have for years. These are excellent knives for the price and will do the job well.

I guess that is why BMW and Mercedes cars lose so much value and break down a lot. USA engineering is best.

German cars are not the most reliable on the market. They also suffer from different kind of problems from time to time, even the most expensive series and the most expensive brands. A more expensive car does NOT mean more reliable, but just more powerful, better raw materials, supposedly better fit & finish, etc. But NOT more reliable. Germany makes good knives, like Spain does.

@@gcalvaro Stuff breaks. But statistically if you check used car market you'll see that German brands prevail. Meaning German cars will last longer. Mercedes being at the top.

I have a wide range of knives including some from Germany. I still find my Japanese knives to be the best.

forged? just welding the differant metal tang to the blade stock

Strip of metal is heated and compressed to get the bolster. Bolster is then forged. Nothing is welded because you can't weld this metal. But it's really irrelevant how you do it for this hard metal because it's tempered at 1200°C.

I agree, misleading calling them forged when only a small piece of the knife is actually forged. Check out the video how Sabatier knifes are made there they have a lump of metal getting pressed into shape when cut out.

X50crmov15. half a percent carbon is not high carbon. Vg10 is .95 percent to 1.05. aus8 is alot better .8 percent. Germany make a good niolox steel with niobium in it and .8percent carbon and less chromium for a finer grain steel. Got it at 60hrc fantastic.

@@vikt0r1988 Bolster is forged. But forging doesn't add anything to a metal when metal is heat treated at 1200°C. Anyway to get a thin sheet metal - how would you call compressing it under rollers?

They are stamped steel with forged bolster. Forging stainless is rubbish in this day and age.premier steel, doubt it. Not as good as japanese vg10 nor as hard 60-61hrc. Tried wusthof out of box, rubbish edge. My hattori vg10 will whittle hair and gravity cut phonebook paper. No cryo to limit austenite growth and better grain refinement. Own german knives, but nothing compared to japanese.

Germany knifes get dull quickly tho. The steel is too soft comparing to Japanese rivals.

And that's the reason why the Japanese get chipped that easy as well. The harder the steel, the more fragile and more prone to chip. 58 HRC has been for long tested as the best hardness for all round use.

I used a Sun Premier everyday for five years and it never need sharpening until recently, no chips ever. Oh and the Shun is so so beautiful.

This is the best stainless steel you can get. Japanese knives are made of carbon steel, meaning they'll rust. And this knives don't get dull. 58HRc is pretty damn hard.

Its better to get dull than break like Japanese knife, moreover the German one use better quality steel compared with Japanese one, if you are keen sharpness of knife while ignoring all the other facts just make knife from file

"All the transportation, from one production unit to the next, is done automatically so that the knives are cared for all the way." I laughed out loud when I heard that sentence. The knives were previously transported by people. And for each person Wusthof had to pay a salary and also benefits (sick time, vacation, holidays, medical insurance, etc.). Now Wusthof paid once for robots and they are hoping that one time investment pays off for years to come. Be honest Wusthof....stop the Disney World fairy tales.

Kinda weird that a company with only 300 employees supplies the whole world with this knives. Salaries must be huge.

Worst knives ever... Any knives that are stamped out of blanks rather than hammered are rubbish. Ever since I got my hands on a hand forged Takamura Suminagashi, I've never looked back at German knives.

This comment is unfair. You are not comparing German vs Japanese, you are comparing industrial vs hand made. Germans do also have hand made forged knives, like Japanese do have industrial knives as well. The point is that there is more German industrial than hand made, whereas there is possibly more Japanese hand made than industrial. Spain does also produce excellent knives, both industrial and hand made (millenia of tradition).
